Japanese Style Grilled Mackerel - Saba Shioyaki (air frying) made easy by Chef mol on golden hill

  • Japanese Style Grilled Mackerel (Saba Shioyaki)
    Ingredients: Norwegian Mackerel - 1, Chinese Cooking Wine - 1 tsp, Mirin - 1 TBsp, Table Salt - 1/3 tsp + 1/3 tsp, Cooking Spray - a little, Lemon - 1-2 slices.
    Chef mol on golden hill said, "Joy from food as well as health in life can be achieved with easy ingredient, simple equipment and small portion."
    1. Rinse Norwegian Mackerel under tap. Then debone and fillet. Remove visible intestines, if preferred. Leave skin on.
    2. Pat dry. Then brush both sides of fillets with a mixture of Chinese Cooking Wine - 1 tsp, Mirin - 1 TBsp. This is important so as to get rid of the fishy taste, enhance the flavor and further penetration of table salt as seasoning later.
    3. Apply Table Salt - 1/3 tsp to the skin side. Use a brush to ensure even distribution of seasoning. Then flip and apply Table Salt - 1/3 tsp to the other side. Use a brush as well.
    4. Chill in fridge for a few hours to allow full penetration of seasoning.
    5. Air fry at 390 degree F for 8 min, flip halfway thru. Line frying basket with foil and apply Cooking Spray to avoid sticking to the bottom of air fryer. If preferred, apply a little Cooking Spray to fillets as well.
    6. It is great to serve with sliced lemon and steamed rice.
