This video chronicles an amateur attempt at replacing a thermostat and thermostat gasket on a 2000 Toyota Camry. The job is rather simple, as access for the most part is plentiful. You'll need a 10mm wrench with a stubby handle, or a swivel/universal joint adapter for a 10mm socket.
Remove the two nuts (don't lose them!), pull the housing away, and pull out the old themostat and gasket and replace in the same fashion. Put the housing back, put the nuts back on, and refill the cooling system. The idea is simple, in practice however, takes a bit more doing.
After replacing the thermostat and gasket there have been no more leaks.
