After Hurricane Katrina hit New Orleans in 2005, chef Tory McPhail was tasked with one of the greatest challenges of his career: rebuilding his restaurant, Commander's Palace, from the ground up. After some of the toughest work of his life, the famed New Orleans restaurant was reopened in 2006 and has been churning out some of the best food in The Big Easy ever since. In this episode of Chef's Night Out, Tory and his crew eat and drink their way through the French Quarter, starting with his newest restaurant, SoBou, which he calls "the best cocktail bar in the South." After some bourbon-based cocktails and snacks made by executive chef Juan Carlos Gonzalez, they headed to Chart Room for more whiskey, then Sylvain for champagne, fries, and tapas. To cap off the night, chef McPhail whipped up a munchies meal of his own: smoky pork tacos with fried oysters, pickled veggies, and foie gras aioli. Let the good times roll.

I might not be a huge fan of Vice but I am really loving Munchies. Keep up the good work
Vice has gone down the shit hole. Should just become a documentary-trailer channel.
Nick. D Hvae you paid attention to their coverage in Sudan and Ukraine/Russia? They still got it. Let's not forget North Korea...
Matthew Richards It's all liberal slanted bullshit. Don't get suckered in to buying thier shit
Bacon Shakes they lean towards being on the liberal side but the overall message of vice is that everythings fucked
Bacon Shakes "liberal slanted bullshit" ...what a vague troll comment. I bet you eat McDoanlds, watch munchies and pretend what your eatting is munchies.
As a chef I appreciate that vice has taken the time to get into the "behind the scenes " of chefs and the kitchen crew of these amazing restaurants , I love this series. Keep it up!
I cook a mean grill cheese ,
could you give me a job?
Work drink eat drink work, its pretty in depth stuff
I'm just shaking in envy as I watch this during midnight.

Never worked under chef Tory but I have met him and he told me the same thing I’m hearing in the video. If you wanna be the best, you have to work for the best.
IDK but this is one of the most satisfying episodes ever.
All great chefs are crazy

Drinking out of a pint container labeled goat cheese is pretty epic.

Watching a video on my own city was pretty existential
This might be the most delicious episode ever. Balanced out by amazing cocktails and other libations. Working that hard is its own reward.Blessings ChefMike
whats this guys problem with idaho?
Shit state.
Literally
Lol... McPhail... Funniest Irish last name. Anyways, I sometimes find it hard to watch these videos because i get too jealous. Even though Milwaukee has a lot of amazing restaurants, its hard to afford sometimes. I wish they would do one of these in Milwaukee though.
Creole food is not a "more refined version of Cajun." Sorry. It's not. Creole food comes from West Africa (i.e. slaves), and Cajun is from French Acadian ethnic group that emigrated out of Canada.
You're not quite right either. They're both mix of many influences. So i agree one's not a more refined version of the other, but they do have similiar elements/influences etc, especially since the influences on creole food are similair to that in the cajun population. Also, the cajuns didn't really emigrate, they were exiled from their land by the english and settled in another french colony, so it's like they got forced to move somewhere else in their country? and then lousiana came under spanish then american control, plus slavery, so cajun culture became influenced by lots of things and isn't just an offshoot of acadian culture anymore blah blah blah. They're similiar but distinct.
Jonathan Matthias Sorry yeah. I knew of this already, but was too lazy to write it. I think we can agree that the chef was wrong though. If you look at the recipes and know the techniques you can clearly see they are two separate cuisines that simply share some ingredients do to their proximity with each other.
No.Creole people are All white people (Europeans), Blacks (African), Asian and people from Oceania (Hawaii,Australia). Only Mexicans, Guatemalas, Peruvians etc. are Natives of America. en.wikipedia.org/wiki/Creole_peoples
This is what life's about!! Food friends and alcohol
Tory McFail haha
Wow! He gets really pink when he drinks.
I liked this episode, dont know why...
Could someone please help by telling me what kind of awesome looking tomatoes he is using at 3:25?
Depending on when it was shot, they were probably Creole Tomatoes. I've only seen them in southern Louisiana.
Heritage tomatoes
Thumbs up if you think that weird chef looks like Vincent Corleone in the God father pat 3!!!!!!!!!!!!!!!!!!!
I'm an aspiring cook trying to work my way up in the restaurant business. Watching these videos makes me really depressed.
How come? These vids should be inspiring not depressing!!
holy fuck i need that taco
Now this is a good chefs night out, no over the top hipster bullshit
He looks like lance bass
I like these videos but as a cook I never get to hang out with the chef . you should do a episode with a bunch of line cooks and dishwashers See how they party .
this dude is trying so hard to give his whole marketing pitch lol
There’s a traffic tranny in Vancouver too
Tory literally needs to say literally a few more times...literally!
Gordon Ramsay says "beautiful" all the time in his tutorials =)
"literally"
Juan overthere cooking up a storm with no hair net.. ??
il liba x'buzz
Refined version of cajun my ass
He goes through "literally probably, 200 of these things a day." So its exactly 200, no maybe its around 200.
Hannah had the coke.
Heheheh... McPhail.
y are they all chicks LMAO
ay his food look dank tho
pimp game strong
his girl and 2 side bitches hahaha
Suspect most chef's and crew don't have affiliate places they can get free drinks and 'gournet' food from.
he looks like larry bird
New Orleans my ass
Is Munchies a spin off from Vice?!
ya its the food & driks part of vice
fuck thats delicious !!
Puerto Rican Word :
PINCHOS 🇵🇷🙋🏿♂️ > Juan
I never understood why chefs touch the food.
His explanation of where the word cocktail comes from is complete and utter bollocks
why not explain what you believe to be it's origin rather than just saying it's wrong?
smallnumbers36 Because I don't have time and you have a fucking computer to find out yourself
Tahi R-C Tell my wife and kids, they will be stunned by this information from a YT powerhouse like yourself , have a nice day
Tahi R-C Poor response, I thought I was a "faggot"
Tahi R-C LOL, thanks man :)
imagine the morning sharts
New Orleans a "civilized city"... ok haha
god i am sick of hearing "erbs" for herbs
wow virtual decadence! all that booze and rich food smothered in rich food. This may taste good but it'll kill you too.
This food will not kill you its called moderation
1/10 - he says "cocktail" too much
200 plastic spoons a day? How fucking unnecessary
Why is that every girl with the name "Brittany" is almost always blonde?
Karl Glenn
Cause only white moms name their daughters brittany..
This guy has no friends
my god why use plastic spoons? Dudeeeee this is so bad for environment :( I hope they don't throw that shit out. 200 spoons a day for one man..
waste of spoons
mcphail has to be the worst name haha
I love these videos but this one is really scripted. Not genuine.
this guy is too pretentious
Whatt??? Thats a hater comment. All i got out of this guy what confidence. No arrogance at all
If you worked at Commanders Palace you would be as well.
chefs are just such sad people
work for the best in the culinary world to be the best: totally agree. Then the chef says: 'You can go directly to New York or you can come down here to New Orleans." wtf? Paris? London? Hong Kong? Bangkok? /evaluation: completed. Idiot detected. :)
towardthelight:) The guy was probably poor then and was given the best local options
You've obviously never eaten in New Orleans.
