MUNCHIES: Chef's Night Out with Tory McPhail

    After Hurricane Katrina hit New Orleans in 2005, chef Tory McPhail was tasked with one of the greatest challenges of his career: rebuilding his restaurant, Commander's Palace, from the ground up. After some of the toughest work of his life, the famed New Orleans restaurant was reopened in 2006 and has been churning out some of the best food in The Big Easy ever since. In this episode of Chef's Night Out, Tory and his crew eat and drink their way through the French Quarter, starting with his newest restaurant, SoBou, which he calls "the best cocktail bar in the South." After some bourbon-based cocktails and snacks made by executive chef Juan Carlos Gonzalez, they headed to Chart Room for more whiskey, then Sylvain for champagne, fries, and tapas. To cap off the night, chef McPhail whipped up a munchies meal of his own: smoky pork tacos with fried oysters, pickled veggies, and foie gras aioli. Let the good times roll.

    Lol... McPhail... Funniest Irish last name. Anyways, I sometimes find it hard to watch these videos because i get too jealous. Even though Milwaukee has a lot of amazing restaurants, its hard to afford sometimes. I wish they would do one of these in Milwaukee though.

    Creole food is not a "more refined version of Cajun." Sorry. It's not. Creole food comes from West Africa (i.e. slaves), and Cajun is from French Acadian ethnic group that emigrated out of Canada.

      You're not quite right either. They're both mix of many influences. So i agree one's not a more refined version of the other, but they do have similiar elements/influences etc, especially since the influences on creole food are similair to that in the cajun population. Also, the cajuns didn't really emigrate, they were exiled from their land by the english and settled in another french colony, so it's like they got forced to move somewhere else in their country? and then lousiana came under spanish then american control, plus slavery, so cajun culture became influenced by lots of things and isn't just an offshoot of acadian culture anymore blah blah blah. They're similiar but distinct.

      Jonathan Matthias Sorry yeah. I knew of this already, but was too lazy to write it. I think we can agree that the chef was wrong though. If you look at the recipes and know the techniques you can clearly see they are two separate cuisines that simply share some ingredients do to their proximity with each other.

      No.Creole people are All white people (Europeans), Blacks (African), Asian and people from Oceania (Hawaii,Australia). Only Mexicans, Guatemalas, Peruvians etc. are Natives of America. en.wikipedia.org/wiki/Creole_peoples

      Depending on when it was shot, they were probably Creole Tomatoes. I've only seen them in southern Louisiana.
