    This worked for me. Simple salt and pepper seasoning, seared each side on high for 30 seconds, then the sides for another 30, lower to medium heat and add butter and garlic powder and cook every side for one minute before flipping. All while making sure you keep pouring the butter and garlic powder over the steak as it cooks with a spoon. About 6 flips makes a good medium rare steak. 8-10 makes well done. So fast and easy, making this for my girl on Valentines day!

    once i learnt the basic timing i can now cook it perfect everytime. key steps are the high heat smoking pan in the beginning. sear each side 30secs. then turn evry minute with flame turned down to med-medhigh.
    give it a good 5 mins if its around 2.5cm thick.
    *then wrap steak in foil and rest for a solid 8mins.
    nice n pink inside with meat juices dripping.

Now I've heard some say you want to use vegetable oil for high heat and not olive oil, but Mr. Ramsay clearly put emphasis on the olive oil that he used. also how did he keep the color of the butter such a magnificent yellow and not burn it?

  • @surreal15m
    @surreal15m Před 11 lety +4

    You often heavily season the steak because most of the time, when your pan is scorching hot, a lot of the seasoning actually gets stuck on the pan so you end up with half the seasoning you originally put on :)

  • @SaintsofLA

    everyone needs to realize something HE'S A PROFESSIONAL COOK
    yes he put the steak back where he seasoned it, something you need to know is if you have quality farm raised beef, which he probably used cause again he's a professional and likes the best ingredients, you could eat it completely raw and you'd be fine unlike store bought hormone filled meat

    I am a professional chef, and even though it seems very simple, preparing a nice, flavory and juicy steak is quite difficult. There are so many variables that even if you get one wrong, the whole dish will go south. I have prepared a decent number of steaks and it took me quite a while to realize it's better to use a pan than a grill if you're looking for a moist, tender meat with a crunchy/fatty exterior. Gordon Ramsey makes it look very simple and easy, but trust me, it takes a lot of trial/error and analysis to learn how to prepare an excellent steak.

    • @eddyvideostar

      Constantino: It seems as if Mr. Ramsay had done all of this trial and error during his long successful tenure not only as a professional chef, but as a teacher and a mentor to the public. This is why it seems as if this is so simple. For him, it maybe so.

    • @seikibrian8641
      @seikibrian8641 Před 9 lety +48

      +schlaznger If you're cooking it on a grill, turning it only once (or at most twice) gives nice grill marks. If you're cooking it in a pan, grill marks aren't present, so you can turn it as often as you want. Turning it more often transmits the heat more slowly through the depth of the meat, making it easier to get the center cooked to the desired level without overcooking the outside.

  • @TaylorMcRae
    @TaylorMcRae Před 9 lety +6

    I've done the same spices, just a little differently. Also, I've dry-brined my steaks up to 24 hours prior to cooking. Whether you can or not dry-brine the steak, the following method will work EVERY time.
    Ingredients:
    -1 cast-iron or high-heat retention pan
    -2-3 steaks
    -4-8 springs of thyme (depending on the number of steaks)
    -2-3 1tbsp of butter
    -Salt and Pepper
    -2-3 cloves of garlic
    -Grapeseed or Canola oil
    -Oven
    -Tongs or spatula
    Steps:
    1) Bring your steak up to room temperature.
    2) Once brought up to room temperature, ensure the steaks are dry and free of excess liquid. (ie: juices don't leak from the meat when lightly pressed).
    3) Bring a cast-iron or high-heat retention pan
    3) After drying the steaks, take 1 clove of garlic for each steak.
    4) Cut each garlic clove in half and rub the top and bottom of the steak.
    -- NOTE: Do not re-use the half of garlic for the opposing side. --
    5) Bring a cast-iron or high-heat retention pan to high heat and the oven to 200 degrees.
    6) After rubbing your steak with garlic, gently coat the steak with salt and pepper on each side.
    7) Once the pan begins to "steam"/"smoke", drizzle Grapeseed or Canola oil then lay the steaks onto the pan.
    8) Sear the steaks for 30 seconds.
    9) Once the steaks are seared, take the pan off the stove.
    10) Lift the steaks, with tongs or a spatula, and place the springs of thyme on the bottom of the pan.
    11) Place the steaks back onto the pan and place the 1 tbsp of butter on top of the steak.
    12) Place the pan in the oven for up to 30 minutes (depending on the thickness).
    13) Take steak out of the oven and place on a plate using the tongs or spatula.
    14) Eat and enjoy!
    Worth noting is that the cook time will greatly depend on the thickness and cut of your steak. I've, additionally, frozen my steaks for up to 30 minutes as a way to reduce the sear time.

      I agree with all the above comments. There's no way a semi competent cook ends up putting out a product expected of a classically trained chef during the course of a competition. I met a Hell's Kitchen winner in Las Vegas a few years ago. She wasn't really the "Executive Chef" of the restaurant, but mostly a figurehead that was greeting people at the door. many people seems to question Gordon about his steak cooking technique. To be clear, it is 2 different method, turning steaks only once is an older/traditional method where turning the steaks every period of time is a newer method and it's to make sure the heat around the meat is spread yhoroughly.

    Guys, just about every single "how to cook a steak" video on CZcams cooks steaks to this level of rare-ness. And yet everyyyy video I see you all in the comments section shouting "that's fowkin raw mate!"
    Has anyone talking shit ever actually cooked a steak? Because I've made steaks to this exact doneness and they're fantastic.

      +John Raiden If you buy your meat at a supermarket or even most butcher shops you do not want to cook yours medium rare. Well or anything that is below 71° C or 160° F at least not until they are required to label meat glued meat or mechanically tenderized meat. You risk food born illness all that bacteria they claim is just sitting on the surface so killed with the sear not true if either one of those two methods were used on the meat. Currently something in the lines of 90% use mechanical tenderization and it is undetectable unless they label it which they are not required to do until May 2016 in the US anyway.

      ***** Very few people die from food poisoning you just get sick usually. The best steaks are the ones that are cooked properly. The only difference between a well done steak cooked properly and an undercooked one as you like is the juices are brown instead of red. I have said this before on other posts it takes longer to cook a well done properly and chefs figured out they could convince the masses that undercooking one is the way to go and save them time and money. They took their idea from the fact most novice cooks do not know how to properly cook a steak so most people had "hockey pucks" as a kid. The best way to describe what they (professional cooks) have done is to think of the Emperor's New Clothes. You and everyone else that actively looks down on well done steaks are the townspeople.

    • @skillcoiler
      @skillcoiler Před 8 lety

      ***** If you burn it yes that is disgusting one of my points this whole time. Well done =/= burnt the two are not interchangeable. If you burn it you burnt it that is past well done. The fact you think well done and burnt are interchangeable proves you really do not know how to cook steaks correctly.

      skillcoiler I don't know how you came to that first conclusion but in all honesty, taste is taste. No one can "convince me" of what I think tastes good. I either like it or I don't. No amount of trickery will change that.

      +sam luker Not if you buy your meat at a supermarket or most butcher shops. There are two processes you have to look out for that they do not label and one of them is done at 90% of all processing places. One is the use of "meat glue" though if you look close you can sometimes tell that the other you would never know if they didn't tell you they did it and that is mechanical tenderizing. Both of these processes take the bacteria that is "only on the outer lay of the meat and killed off by a good searing so you can leave the middle rare" and bring it right into the steak or roast itself. Meaning if you have any meat where one of both of these could have been used on it you need to cook it to 71° C or 160° F with a proper resting period to ensure the death of food born pathogens all the way through. There are currently no laws requiring them to label either of these so you have no way of knowing. They are requiring the mechanical tenderizing be labeled in the US but that isn't until May 2016.

    It depends on the steak. After you sear the steak, which was the first thing he did, you can turn it over without any problem. If you don't sear it then every time you turn it more juices will flow out, making it boil instead. So if the steak isn't very tall you only turn it once.

    He seasoned it with salt and pepper...he then added thyme and garlic...and then butter. Yea he put the meat back on the same cutting board...like it matters he eats his steaks rare...he was pushing on his palm and then wrist and then forearm to show the difference on how the steak should feel cause you don't want to cut it open to see if its cooked the way you like it. Hope that answers all the questions that I read.
