why don't you mention not to pack sambar when ordering food ? instead you may ask them to pack a bit extra chutney if you like.

People don't eat dosa by dipping in sambar (tho some prefer to), but sambar is tasted differently with spoon after having a bite, it's the way to eat dosa, not a compulsory one but that's how it's supposed to be eaten. Where with idli, you eat idli with sambar, even sometimes you can try eating idli by mixing with sambar and eat this as one dish, throwing all idli in sambar and mixing it. I'm no south indian, but here are some of my south indian hacks, lol.

PS Just a small suggestion, it is fine if you don't like something, but don't waste it. The food you waste can be someone elses food.
If you don't like sambhar, tell the restaurant people to not to serve you in the meal.
This way you could have saved sambhar thrice.
Please think about it.
