Chicken & Spinach Quiche / Tori to Hōrensō no Kisshu
Season 9 - Episode 4
[ Pâte brisée / Dough ] - [ 2 portions ]
Unsalted butter - 125gm
Cake flour - 250gm
Egg yolk - 1 piece
Salt - a pinch
Cold water - 60cc
Butter - some
Bread flour - some
Egg - 1 piece ( lightly beaten )
[ Appareil / Egg Batter ]
Egg - 2 pieces + 1 piece ( left over from the baked dough )
Parmesan cheese powder - 3 tablespoons
Salt - 1/2 teaspoon
Whipping cream - 60cc
Milk - 60cc
Black pepper - some
[ Ingredients ]
Pâte brisée - roughly 230gm
Shimeji mushroom - 100gm
Onion - 1/4 piece
Garlic - 3 cloves
Spinach - 200gm
Bacon - 5 slices
Chicken thigh - 1 piece
Mozzarella & Cheddar cheese - 200gm or more
[ Seasonings ]
Salt & Black pepper - some
Soy sauce - 1/2 teaspoon

Oh, I have tried your recipe. Beautiful and so tasty! Especially the pie crust. Didn’t manage to keep it for the next day, my son and daughter finished it there and then.
