Your Mom reminds me of my mom so much. Except my mom does not cook. She's almost 82 and I love her dearly. By nice to your mum.
I always watch this lady's video, I learned how to do a few things.

I chop up some onion,garlic,escallion and sweet pepper add it to the melted butter. Make it cook until tender then add flour milk and cheese. Pour it over cooked macaroni mix well you can then add more milk if needed. Place in greased baking dish top with more cheese and sprinkle with Panko bread crumbs. Bake.
LOVE her!!!!!!!! Reminds me of my Jamaican mama. I also enjoyed the segment on her grandma; it added a homey, personal touch!

If the chicken is cooked. Remove from the sauce and let the sauce simmer longer until thicker and add the chicken back to the pan.
