I tried it, I screwed up the first time and was a little disappointed about everything yet I didn't give up I tried again followed everything precisely step by step, after I was done making the dough I let it refrigerate for 2 hours and cleaned all of my cookie cutters. I couldn't wait to start making them little pretty shapes was so excited, I've burnt the first batch which had around 8 to 10 cookies there but thanks to my sissy who came up in the perfect time, because I was about to panic, she gave me a hand and the rest of the cookies came out amazingly, I was so astonished by the taste of It and was so happy.
I truly and deeply appreciate You for putting out this recipe on youtube considering the fact that every other gingerbread cookie video had some ingredients I couldn't find around where I live.
I again thank You and wish You a happy holiday🎄🎅
    Merry Christmas.

It didn't foam up because caramel hardened. So the only thing I can think of that something went wrong with caramel:
      - stirring too much before adding water (sugar doesn't like it)
      - too high heat before adding water (so the melted sugar was too hot and liquids couldn't incorpotate evenly)
      - the water wasn't hot enough (we use hot water to make sure that difference between water and caramel temperatures is not too high. Because cold water will cool caramel down too fast and harden it.)
      - and same thing with butter, better when it at room temperature.
I whish I could help more, but I wasn't there, so I could only guess.
