Fun fact: Beijing duck comes from Nanjing since Beijing is quite a northern city where ducks are kind of rare, because Ming emperor move the capital from Nanjing to Beijing, it brings a lot of local dishes including ducks.
It was the whole Ming court, actually. Not just the emperor. :)
@@tc2334 I would have thought that unless an emperor was on the run, a move to another city would automatically include the whole court? Genuine question, because my knowledge of chinese history is sketchy at best.
@@celinahatton2653 I mean the reason why the dish was brought to Beijing is more because the courtiers wanted to eat it than the emperor himself.

The reaction of the guy tasting roast duck for the first time was priceless. LMAO, and jealous.
i spent couple months in southern africa and their cuisine is nothing to write home about.
Thanks to you (and this video)= I ordered myself some Nanjing roast duck for dinner today as a treat since I am recovering from surgery, and it was absolutely delicious! rich, slightly sweet, a tiny bit of sourness. Just amazing. Thank you for making these videos and sharing the not so known chinese dishes in the western world! :D
China consumes 70% of duck worldwide so if this is the duck capital of China, then it's the duck capital of the world.
And the feather can be utilized as duck down coats stuffing.

I envy how well China handled the pandemic. People actually seems to be living life. I miss Chongqing. They also have really good ducks. I would eat one duck every other day when I used to travel there. And 2 grilled pork feet per night. Can't wait until China let Americans enter without quarantine.

Not to mention ducks are very oily with bad cholesterol. I don't know if this is true, good tasty food are usually not healthy. I learned long ago that we should eat in moderation. The bad thing is that I don't really do that.
@阿伦 人家好好説話,對中國也明顯很友好。人家並沒要求中國對美國開放,只説他"can't wait until中國對美國開放。你懟人上癮了?
I believe that the best duck recipes I've ever had were in China and in Chinese restaurants. They cook them so well, so much flavor, truly the best.

One thing about “duck x tangbao”: I don’t know if anyone else has mentioned, but roast duck tangbao (天王烤鸭包) is actually one of the signature dishes at 大牌档 (Nanjing Impressions). Be sure to try it out next time you visit! You won’t regret it. :)
Different parts of duck is basically for texture since they are usually braised in the same stock

From the perspective of traditional Chinese medicine, duck meat belongs to cool food,Chicken is different, so eat more duck in summer
As a Nanjingese who is living in Australia, I have to say I am soooo jealous! I am very homesick.. Nanjing is the source of Beijing Roast Duck. This production method spread to Beijing with the moving capital in the Ming Dynasty.

We are so lucky that here in Sydney, we can get both traditional roast duck and salted poached duck. I love the flavour of the salted duck, but because of the cooking method, it's a bit fattier than roast duck. Either way, any duck meal is a good meal 😋

Hello there Whaleman!
You are supposed to just have a small bite on the soup dumpling first, and suck the juice out of it, then dip in vinegar and eat the rest. You can actually ride tandem bikes on these walls of Nanjing. Fall in Nanjing is particularly charming, the whole city is infused with the smell of osmanthus flowers.

Hi Amy! It's really nice to see that you've been to Nanjing too. My aunt lived in Nanjing, so it's part of my childhood memories. I really enjoyed walking under the paulownia trees in Nanjing, the huge trees give the city a very different cityscape from Beijing.
Also, Nanjing has a very interesting and historical nickname "Stone City石头城", which I think is probably due wto its ancient city walls and buildings.
There is a song about Nanjing called "金陵谣", maybe you can listen to it. They also wrote about Beijing (紫禁), Chengdu (锦中客), Guangzhou (天南歌), Xi'an (长安四韵), and Hangzhou (云山入梦舟). I travel to all these cities and 👂 these songs while roaming the streets.❤
