i remember as a youth i was vagabonding the coast of spain in a clapped out toyota, i ordered caracoles on a whim in a small town cafe and they came served in a tall drinking glass in a peppery broth... regret never finding that dish again

I have snails all over my back yard - my Italian concreter says I can cook them.... they look very similar.

Hey Tom, Escargots as in the large garlicky, buttery ones from France... I don't think those can be beaten to be honest :)
This reminds of an infamous show here where a (foreign) celebrity chef tried to cook crayfish and was surprised to see them crawl out of the pot as they were being boiled alive... before these are burned alive, the foam is likely a desperate attempt of their bodies to excrete the poison - the salt - once it penetrates the membrane they built to protect themselves.
How about freezing them first. Untraditional, yes, but on the other hand decent. And less foam and hassle.

using this olive oil, saying spain again and again, "caracoles", the music... you didn't do very much research of the "local" stuff.🙄🤦♀
