    This has become my new favorite keto bread. Super crispy when toasted and the texture is lighter than most typical seeded bread.
    The base is made of ground sunflower seeds with added toasted seeds such as sunflower, pumpkin, black and white sesame seeds. These are my favorite seeds but you can choose to use any of your favorite seeds.
    Sunflower seeds are versatile seeds that are technically a fruit. These tiny sunflower seeds are loaded with many nutrients such as vitamin E, selenium and antioxidants. However, sunflower seeds can react with baked goods as they contain chlorophyll, also known as chlorogenic acid which reacts with baking soda in a recipe when heated and once the product cools, it turns green but still edible. However, this can be neutralized with the acidity from apple cider vinegar hence, the acv is important here.
    Seeded bread is so much cheaper and healthier than bread with nut flours. I have used these seeds to make a variety of keto buns, bread, cakes and cookies so do check out the playlist. I will be attempting to make an eggless version so I hope it will be successful.

    NUTRITION INFO PER SERVING
    Total Carb = 6.8 g
    Dietary Fiber = 4.3 g
    Net Carb = 2.5 g
    Calories = 187
    Total Fat = 15.2 g
    Protein = 8.1 g
    FOR BEST RESULTS, WEIGH THE INGREDIENTS!
    DRY INGREDIENTS
    Ground Raw Sunflower Seeds = 300 g / 2 1/2 cups
    Notes:
    1. The raw sunflower seeds must be finely ground. It is fine if there are still some chunks as they add to the crunch. Do not over grind as it will become a paste or butter.
    2. Refer to the video on how to grind the sunflower seeds. You can also use pre-ground sunflower flour.
    Baking Powder = 16 g / 4 tsp
    Salt = 1/2 to 1 tsp
    Whole Psyllium Husks = 27 g / 3 tbsp (Ground until half its original volume then weigh it)
    WET INGREDIENTS
    Egg Whites = 6 large (214 g) OR 3 large whole eggs (Note: The protein from egg whites helps to boost the rise while the fats from egg yolks hinders the rise. Egg whites also prevent any eggy taste. Hence, it is highly recommended to use egg whites.)
    Apple Cider Vinegar = 45 g / 3 tbsp (You can also use white vinegar or lemon juice)
    Hot or boiling water = 200 g / 0.8 cup / 13 1/2 tbsp
    TOASTED SEEDS
    Sunflower seeds = 65 g / 1/2 cup
    Pumpkin seeds = 75 g / 1/2 cup
    Black sesame seeds = 18 g / 2 tbsp
    White sesame seeds = 18 g / 2 tbsp
    (Note: You can also choose to use any of your favorite seeds. Mix all ingredients in a bowl. )
    DIRECTIONS
    1. Preheat the oven at 350F or 180C.
    2. In a bowl, mix all the dry ingredients until well combined. Then add the seeds and mix to combine.
    3. Add all the wet ingredients and mix until a dough is formed. The dough is sticky and soft but will firm up as you mix it. It will firm up even more if you let it rest for a while, but it is not necessary to do that.
    4. In the video, I used an 8x5 inch loaf pan but you can also use a standard 8x4 inch pan (amzn.to/3BZIcNc) (amzn.to/35hk4JW). Grease and line the pan with parchment paper.
    5. Transfer the dough into the pan. Spread evenly but leave the top round so that the bread will look taller. Do not compress the dough too much as it will affect the rise.
    6. Top with more seeds and press down gently so that they will stick to the dough.
    7 Bake at the lowest rack for 60 minutes. It is best to use a digital timer. Set it for 30 minutes then rotate the pan and set it for another 30 minutes and it's done.
    8. Cool completely on a wire rack then slice accordingly. This recipe makes about 16 thin slices.

    Made this tonight and it turned out exactly like yours did. Used chia seeds instead of sesame seeds, and about 5 teaspoons of psyllium husk powder. Glorious results, will definitely make it again.

    I have just made this bread, I followed your recipe exactly as you said to do in the video, I measured in the spoons then weighed everything just to make sure I got it right. Its turned out amazingly, I am so pleased and will be making it every week ,as I am on a low carb diet. I am trying to cut carbs all together. I have not yet found a recipe that totally cuts carbs and tastes great. I love a seeded bread and this one is just is so tasty. Thank you for sharing your amazing bread recipe.     Thank you for the recipe. I tried it yestersay and I forgot to add the eggwhites. 😊Surprisingly it came out less fluffy but still very good. I made one more with all ingredients to see the difference. It rose a little bit higher and less dense. But they were both good. Keep up the good work!

    I made this today. I weighted everything, but halved the recipe because I wasn't sure I was gonna like the sunflowery flavour. I made two errors, well 1. First I used roasted and salted sunflower seeds, because that's what I had. So I did not add any other salt. Then, I forgot to half the psyllium husk! So I added twice as much fibre by mistake. I kept all other measurements correct. The middle bottom part of my bread is very dense. Actually all of my bread is not as light or fluffy as it looks here in the video. It's denser. The middle bottom kind of still feels moist even after baking for an extra 10mins. It also did not rise as much as I think hers did here. It's good though, I like the taste and the texture is fine, I just slice it very thinly so it's not too heavy. Also the middle part is totally fine when toasted. I would love to experiment mixing this sunflower "flour" with another type of flour.

    I am a lover of white bread because of type 2; can't touch it. I have tried so many "healthy breads" but none is a hit. Just watching this video tells me this one is a keeper. Will tell u when tried this weekend

      Once I tried a similar, home baked bread I was hooked. I also make Nordic bread, aka as seed-nut-egg bread because that is all that’s in it. Some recipes call for oil which I don’t add. Seeds and nuts are high in fat. I have had lifelong gut issues which disappeared once I began eating it. I no longer add eggs but use water with ground flaxseed or chia seeds as a vegan substitute.

    If you think about it, normal bread is seed bread. Wheat flour is made from wheat seeds. However, the problem is all the unwelcome baggage (carbohydrates, gluten, whitening chemicals, etc.) that it brings for some of us.

      It could be due to the sunflower seeds as it can react and turn green with baking soda and baking powder to some extent. But the acid from apple cider vinegar helps to neutralize the reaction. Thank you so much for your feedback 🙏

      @telmacamargo5311 45 ml is sufficient for the recipe. I found out from other subscribers who had similar issue that when they switched the ACV to organic Braggs brand (with the mother), the issue was solved. Are you using this ACV?

    I have just made two loaves of your wonderful seeded bread. Can I freeze it ? I have been making one loaf a week since, I found this recipe. My brother has asked me to make him some, as he doesn't cook and is on a low carb diet. I thought if I could freeze it, I can batch cook. Thank you.

      @@taheram1629 You can replace the fresh egg whites with 38 g of egg white powder + 210 ml room temperature water (to rehydrate the egg white powder). Mix the egg white powder to the dry ingredients and room temperature water to the wet ingredients.

    New to this baking lark. My loaf is just out of the oven and looks & smells OK, but my first attempt at toasting the seeds didn't go well They kept falling through onto the crumb tray. :-)

      If you are referring to the seeds from the crust it's quite normal. You need to press the seeds down so that they will stick to the dough or brush the top with water then apply the seeds and press down to stick. Even then some will still fall out during slicing. Alternatively you can do away the seeds for the crust

    Do you think ground sesame seeds can be safely swapped as the base flour rather than sunflower seeds? With of course the addition of a mix of whole toasted seeds as you used them.

      Frankly I have not tried that for this recipe. I do have bread recipes using sesame seeds so I suggest you follow those recipes as the ratios may be different. Then just add the seeds. Check out the BREAD playlist for the sesame bread

    Could psyllium husks be replaiced with xantham gum?

      I have tried xanthan gum before and found that it does now work well for bread. The bread does not bulk up and texture is very sticky. Psyllium husk is still the best replacement for gluten but you need to use it properly to get better results.

      You can use store bought liquid egg whites. I have not tried it with egg white powder so am unable to advise. I have also not tried the yeast version yet. Even if you add yeast you will still need baking powder as non gluten bread especially with low carb flours does not rise as much as regular bread

    I have made this recipe about 5 times now, I weigh the ingredients. It is very nice toasted. However, it does not rise like on the video. It rises a little and then drops . What do you think might be the problem?

      Absolutely! If the dough is too soft just let it rest for awhile about 5 mins then it will be firm enough to shape into buns

      Frankly I have not tried that so am unsure whether it will work. Eggless keto bread is very tricky so even with flaxeggs it may not work as I have tried it in other recipes

    Hi my dough after adding the water it comes out very sticky, any suggestions?

      As mentioned in the full written recipe at the description box the dough is sticky so just wet your hands for easier handling. Most keto bread dough are sticky due to the gumminess from the psyllium husks so it's normal but it will bake up fine. Even after baking you will find the texture a little wet and sticky which is also normal. After toasting they will be dry and crispy

      Raw sunflower seeds are better as they will be roasted during baking already. Over roasting will make the baked goods dry.

      Yes but you need to make them into buns as shown in this video. It didn't work with loaves unfortunately.

      You can replace with white vinegar. The vinegar helps with rise and texture but it's not fatal if you omit it

      Unfortunately, you can't replace psyllium husk as it is the best natural replacement for gluten. It holds everything together and provides elasticity to shape the dough. Without it the bread will be crumbly with cake-like texture

      It's the 4 tsp of baking powder and the protein from the 6 egg whites that helps to boost the rise

    Some keto bread recipes use stiff egg whites. Is that not necessary?

      Not all keto bread requires that especially if the dough rises well. I do that for a few of my white keto bread without psyllium husk

      However, I only put in 10 grams of self ground psyllium husk and it seems to work well.
