Delicious Ground Beef & Vegetable Kabab Recipe - Healthy recipe great for picky eaters!

  • Do you have kids who are picky eaters? I make these delicious ground beef and vegetable kababs that are so succulent, juicy and moist, full of flavor, and with the goodness of zucchini, carrots and bell peppers. My kids cannot even taste the vegetables in the kababs!
    They are lighter than plain beef kababs with the addition of the vegetables, and can be served many ways. You can make burgers, sandwiches, wraps, or serve these delectable kababs along with rice or salad, with grilled/roasted vegetables, or make meatballs as an appetizer, or add to marinara sauce to serve over spaghetti.

    2 lb ground beef (or substitute with chicken, lamb, or turkey)
    1.5 tsp salt
    2 tsp black pepper
    2 tbsp crushed red chili flakes
    2 tsp garlic powder
    2 tbsp ground coriander
    2 tbsp ground cumin
    2 eggs
    1/2 cup bread crumbs
    1 cup chopped cilantro or parsley
    1 carrot, grated
    1 zucchini, grated and moisture squeezed out
    1/2 bell pepper, diced
    2 green chilies (optional for extra heat)
    6 green onions/scallions/spring onions, chopped
    Mix everything really well till fully combined in the ground beef. Shape into kababs or meatballs, and shallow fry in 2 tbsp oil for 3 minutes per side. Serve hot with chutney or dipping sauce of your choice. Enjoy!
    Remember, you can adjust all spices according to your own taste. These can be frozen for up to 2 months.
