Today I want to show you the beautiful Southern Thai Old Town of Songkhla.
I want to say that I meant to say rustic not ramshackle in the first restaurant 😬
Songhkla has one one the most beautiful Old Towns I've visited in Thailand packed full of unique food, coffee and old restored buildings. This is my kind of place!
In my opinion, if you're heading to Hat Yai, you have to make time for at least a day trip to Songkhla.
Today I headed out for the ultimate Thai street food tour which included roti mutabak at a super local Halal joint, some epic gai tod (Thai fried chicken), a unique Songkhla salad, a hand roated coffee and a local handmade ice cream. All topped off with a trip to an island for some ice cold beer and some of the best rad na and pad see ew I've ever had! Songkhla is amazing!

LOL I always love when an english citizen give his opinion on other countries food.
Actually, everyone knows that UK is THE specialist about gastronomy. In the UK dishes top list, we can find very elaborate stuffs (don't laugh), as :
- the great "Fish and chips", that requires accurates skills for preparing
- the gorgeous "Jelly cake", the only dessert that moves by itself to your plate
- the "british breakfast" that offers you a free ticket to your cardiologist
- the "christmas pudding" (to be cut with an axe) that can use to block your car in a slope
- the "stew" that we can call a "put it all in" and let it cook
This is probably the end of the list of the top UK flavours.
So, i am not surprised that UK citizen are in love of thai food (or any other food).
When you don't have anything to eat at home, even a roasted rat becomes a yummy dish.
I suggest you to visit FRANCE and have meals in a good "brasserie". Even the most ordinary dish is 10 times more elaborate technically and tastier than any thai noodle or Tom Yam prepared in 10 minutes.

I just try to balance the praise often exaggerated on Thai cuisine.
First, you have to be realistic
In Thailand, it's like all around the world. Only a few restaurants still cook with respect for tradition. For example, the majority of restaurants, street food stalls or families no longer prepare their curry pasta or sauces: they buy industrial preparations at the market or from Makro. I do not even want to approach the conditions of hygiene and the abusive use of glutamate, sugar and chili that destroy the taste of food in Thai dishes but also harm health. For most of restaurants, it is necessary to produce at the cheapest and in quantity to release a profit. So, we cush up the quality of the products and save on preparation times.
The result is that in Thailand, from one restaurant to another, a Pad Thai, a Khao Pad or many other dishes are very different and sometimes unrecognizable.
A tourist (English or other) will rave because, for him, the dish is "exotic" by its strange flavors and its rich mixtures, but a Thai will be able to make the difference very well.
The other aspect is culinary technicality
Yes, Thai cuisine is rich in flavors and delicious, but because it mixes dozens of ingredients. But find me a Thai cook capable of making me a poached fish with a Dutch sauce, good baked meatin an oven or a reduced meat juice. Find me in Thailand a pastry chef capable of making a simple chocolate mousse or a puff pastry worthy of the name. Maybe 1/1000, if you are lucky...
Sorry, and even if I eat Thai every day, I continue to think that Thai cuisine remains technically simple and has nothing to do with the French culinary techniques taught by Escoffier, Gouffe or Bocuse ...
And, as a bonus, when it is an Englishman who arises as a culinary specialist, it makes me laugh. I lived in england for a while and i cannot say this is the "gastronomy country".
Even if the Michelin guide is not God in terms of cooking, he has the merit of recalling reality

I think that Thailand cooks have stille to learn more on many topics : hygiene, technicality, dressing
They should also impose limits in the use of bad frying, glutamate, sugar and chili, in order to allow the customer to find the taste of food and make their cuisine healthier.

You might want to try Kang Som (แกงส้มปลากระบอก) with grey mullets, especially with roes, when you’re in Songkla.

the wall art in Songklha is very beautiful i think..i am also a coffee freak.well as you know roti is not my favorite food,but i really like that chicken with sticky rice.yes pigs ears or legs taste the same,actually to nothing, they take over the taste of the sauce. I like to drink ovaltin, but the real Thai ice cream is not. The chill bar looks great. I always like a noodle dish, and that egg on it is perfect.very good vlog Gary.

Great seeing Songkla getting some love. I adore the town (fantastic food and drink, great heritage, booming coffee culture, amazing night markets, and really friendly and welcoming locals, and popular with Thai tourists so plenty of quality guesthouses and heritage hotels to choose from). It's a crying shame so few Western tourists make it down there.

Ramshackle is fine by me, but you know that. These were some great dishes, I could smell them cooking on the wok. Don't get too MW on these videos, it's good for the tourists, but in the long run, it's all about the real street food and atmosphere deal.
