    It takes longer than 5 or 6 minutes. It takes longer than that to heat to curd formation. Then set 15 to 20 minutes covered to keep the curds forming. This brings us to removing all the curds to a cheese cloth to continue the drain process, squeezing the bag tighter each time until fairly like a dough or the draining is almost stopped.When drained, you add the butter, and herbs and mix. It should get nice and creamy. If adding fruits, fold them in. THIS IS WHEN I ADD SALT, NOT IN THE INITIAL COOKING BECAUSE OF THE ANIMALS AND IM ON A LOW SALT DIET. Press into a mould of choice and refrigerate at least overnight with weight on to press nice for a firm set. This means either fill to the top or have something a little smaller to slip in for weight. Making cheese from the larger tub of PLAIN Greek yogurt is much faster. Just dump the yogurt into the cheese cloth, place over a strainer and bowl and twist to remove liquid or whey. Continue to drain until it pretty much stops and proceed as with the other cheese. I make a lot of the stuff for gatherings. Also its a fun project to do. When I make cheese I like to add a little raw honey during the mixing. 5 or 6 minutes? Nope! More like 20 minutes to a half an hour to start and then the time in the cheese cloth to drain off the excess. Also, make SURE NOT to use ULTRA pastured milk as it wont work.😊 Goat milk is good too, if you dont mind the price! Save the whey for soups, stews, desserts, give a little to your cat or dog or water the plants. I use it in my pancakes, cakes and oatmeal, too! It will last 2 weeks in the fridge so there's plenty of time to use this whey up. This is a great way to use up soured milk rather than tossing it out. MAKE CHEESE!😂😊
