INGREDIENTS
For the onion jam:
- 1 tbsp olive oil
- 3 medium onions, diced
- 3/4 tsp kosher salt
- 1 sprig fresh rosemary
- 1/3 cup light brown sugar
- 2 tbsp balsamic vinegar
For the cowboy butter:
- 5 tbsp unsalted butter
- 1 clove garlic, minced
- 1 tsp minced fresh thyme
- 2 tsp minced fresh parsley
- 2 tsp minced fresh chives
- 2 tsp Dijon mustard
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 1/4 tsp chipotle powder
- 1 tsp Worcestershire sauce
For the sandwiches:
- 15 sweet rolls
- 15 slices honey ham (about 12 oz)
- 8 oz cheddar cheese, shredded
INSTRUCTIONS
- In a large skillet, heat the oil over medium. Add the sliced onions and salt. Cook until they are softened and turning brown, 8-10 minutes. Add the sprig of rosemary and brown sugar. Stir constantly and cook until the sugar melts and it becomes a thick jam, 4-6 minutes. Remove from the heat and mix in the balsamic vinegar. Set aside.
- In a small saucepan, combine the butter, garlic, thyme, parsley, chives, Dijon mustard, black pepper, salt, chipotle powder, and Worcestershire sauce. Melt the butter over low heat and stir until everything is combined, 3-4 minutes. Remove from the heat.
- Preheat the oven to 325°F. Slice the rolls in half, creating a sandwich bun, and place the bottom halves in a 9x13 baking dish. Brush the bottoms with 1 tbsp of the cowboy butter and spread evenly with prepared onion jam. Fold the ham into quarters and place one slice on each bun. Sprinkle with shredded cheese and place the top bun on each sandwich. Brush with the remaining butter. Cover with tin foil and place in the preheated oven. Bake for 15 minutes with the cover on, then remove the cover and bake until the buns are golden, 12-15 minutes. Serve immediately.

Hey, Kaleb... Thanks for this recipe. Caramelized onions put these sliders of yours wayyyy beyond the average sliders. BTW, you can make extra caramelized onions and freeze them either in freezer bags, or even in ice-cube trays, so you can use them as you want. Have to also say, that my employees in my clinic know that I watch all your shows... so they gave me a cutting board identical to your Boos board for my birthday. So cool of them. (Side note: My Mom used to make a dessert called Watergate Salad. She took it to an event at her workplace once and someone said, "Oh--that's "funeral salad"!" Just like your sandwiches, the dessert was a common food to take to families when a loved one passed.)

We have funeral jello in our family, and I have heard of funeral potatoes.. I have been having dinner meetings at my house every other Sunday. We are planning an October event called the Walk of the Undead. I think I am going to serve all "Funeral Foods" lol.

Would love to make these but I need to get a new propane oven. My oven died so if it is not made on top of stove or put into microwave I can't make it. Lost my use of oven in September.
