hey mark ! when you said "who's 'they' it's only one person" I wanted to inform you that 'they' is a gender neutral pronoun that some people prefer and it is best to use if you are unsure of someone's preferred pronouns. thank you !
Technically however, it's not. That's informal/improper English, and following English rules the only correct forms are she/he, s/he, (s)he etc. due to the fact that "they" refers to the plural "them/their".
