Airfryer Danish Vanilla CROWNS, easy PASTRY CREME recipe too

- while in my local community shop, purchasing one stamp (for Heidi Ricky :D) I had to buy something to get purchase over a certain amount in order to be able to pay by card.
Now this little community shop does NOT put any prices on their stock, so you have no idea how much something is until you get to the till (I rarely shop there but the polling station was next door and I needed a stamp)
Anyway I digress. I grabbed the nearest thing, a pack of 2 Vanilla Crowns and the chap tilled in £3 plus the cost of the stamp. Horrified I paid up and left the shop, slightly stricken (I am half scottish) anyway, after eating said delicious albeit flipping expensive vanilla crown, it got me thinking - can I make this and surely it has to be cheaper than £1.50 per crown!!!
hence the convoluted yet inspired vlog that this is.....

1 pack of ready rolled puff pastry
3 large (or 4 med sized ) egg yolks (I used 4 med)
50g caster sugar
1 tsp vanilla extract
25g cornflour/cornstarch
40ml whole milk
pinch of salt
28g unsalted butter
sprinkle of flaked almonds
1 egg (for egg wash)
combine egg yolks, sugar, salt, vanilla extract and cornflour into a large heatproof bowl, whisk vigorously until smooth.
Meanwhile heat the milk in a heavy bottomed saucepan, once milk starts to bubble around the sides pour half of it slowly into the egg mixture stirring vigorously.
Pour the contents of the bowl back into the saucepan and on a medium heat, stirring for 5ish mins, it will begin to thicken.
As soon as you see the first signs, take off heat stirring vigorously.
Set aside putting cling film/plastic wrap over, pusing wrap down so it touches the pastry creme (this stops a skin forming).
Leave in the fridge for 1 to 2 hours.
Unroll pastry, and using a cutter (mine was 12cm dia) cut out 8 circles, remove access (this can make a rough 9th)
pop 1 to 2 tsp of vanilla pastry creme (very like custard) into the middle, fold over edges.
Brush with beaten egg, scatter almonds over and pop into a preheated AF, put on BAKE setting (or standard setting of your AF)
Bake on 190c/370f for approx 10 mins - you may need to flip after 7 mins if using AFs with just top elements.
Keep an eye as all AFs vary slightly on timings & temps.
Once cooled, dust with icing sugar and enjoy!

Evening Kerry, why have I never heard of vanilla crowns 🫣🤣. These are something that I would have attempted to make but takes me all my time to get a bottle of water out the fridge 😒. I had to buy Harrisons birthday cake for Friday 🤦♀️, bloody nightmare when you cant do things you're used to 😩. You need to practise the egg yolk removal using the plastic bottle (I've never tried it right enough lol). Those look amazing, loving the "snow" effect 😂😂. I would definitely try these, I would put some cinnamon sugar ontop instead of almonds. Well done Kerry, that was a hard task you had being chief taste tester 😅. Hope you have a lovely evening. Those looked scrumptious I must say well done and a much better price! I think I would use custard powder for the custard stage to save the faff, I find I can get get a goos pastry cream using custard powder and a little butter. I would use the left over to fill a Victoria sponge with perhaps a thin layer of jam first followed by the pastry cream/ custard. I have to say I have not actually heard of Danish vanilla crowns but an old fashioned patisserie where I lived but now gone sadly used to make on the premises custard Danish which was pretty much the same thing, they glazed theirs with apricot jam.

Didn't realize they were that easy to do with using ready made pastry Kerry. The left over custard would have ended up inside me love custard. Could use in a Victoria sandwich yummy. The did look delicious Kerry bet your family definitely approved.

Could you not whisk milk into make it “real custard” to go on a crumble. It’s made exactly the same way except yours is thicker.
