Spaghetti Pomodoro

  • Ingredients for 2:
    200g spaghetti
    1 liter of tomato puree
    1 cup of cherry tomatoes
    A handful of fresh basil leaves
    3 garlic cloves
    Instructions:
    Cut the fresh tomatoes in half and place them in a large, heated skillet. Cook the tomatoes over medium heat, stirring occasionally until they are nearly charred.
    While the fresh tomatoes are cooking, place the tomato puree in a separate pot along with a drizzle of olive oil, garlic, a handful of fresh basil leaves, salt, and pepper to taste.
    Bring the tomato mixture to a boil and reduce the heat to a simmer. Cook until the sauce has reduced by half, approximately 20-30 minutes. This will result in approximately 500g of delicious tomato sauce.
    Cook the spaghetti according to package instructions and drain.
    Serve the spaghetti with the reduced tomato sauce and cherry tomatoes as a garnish. Enjoy!
