They are easy to make two. If you really wanted to, you could make like 15 in only a few minutes. just take a bit of pork green onion and maybe a bit of soy sauce wrap them up in some rappers, you can buy like 50 for five bucks, and then just steam them.

MY question on the dumpling would be is if the dough was worked enough. Properly worked and folded dough will stand up under moisture where if the dough the under worked the gluten strands won't be woven and strong enough. The steam also likely wasn't hot enough to rapidly cook the outside of the dough and instead just made it soggy. I noticed that your steam maker was a good distance from the box which means there was a lot of tube for the steam to cool down along, I would suggest using two steam machines and connect them directly on the box to minimize the tubing needed. But still, Good job on making a world record you two.
