Like my Mother, I too first gently roast rice in Ghee ... not just when making Pulao but also when cooking daily plain rice. Then, add boiling water.
.Here you should have roasted potato chunks BEFORE adding other vegetables. Reason: the same logic goes for roasting potatoes. The taste of any carbohydrate-rich food depends upon the manner in which its starch gets cooked.
Shape matters very much too in that if affects manner of cooking starch and the time over which it gets cooked. Cubed potatoes taste quite different than shredded or those cut in long strips even if they are cooked in the same manner ...fried, roasted or oven-baked.
The texture of cooked potato also changes. That's why baked and boiled potatoes taste different than roasted and fried potatoes... it is not as much because of oil (that, too) but the manner in which starch is cooked.

It is Amazing..just like to share my experience...matar should look green while u serve so for that what I do is I put matar . when rice ( water) starts boiling..that to after 5 minutes of boiling because in steam it get cooked and the color stays intact
