EASY AND SUPER TASTY EGGPLANT AND POTATO CURRY RECIPE / ALOO BAINGAN RECIPE / VEGAN RECIPE

INGREDIENTS
1/2 kg eggplant cut into 1 and 1/2 inch
4 medium size potatoes, cut into wedges
2 medium size tomatoes, chopped
1 large onion, sliced
1/2 cup cooking oil
1 bay leaf
1 tsp of cumin seeds
1 tsp of ground coriander
1/2 tsp of ground turmeric
1/2 tsp of crushed black pepper
1 tsp of ground red chilli
salt to taste
some chopped coriander leaves
