89yr old Adriana makes an easy beans with 'strozzapreti' pasta ! | Pasta Grannies

  • Strozzapreti are twisted ribbons and Adriana likes to serve them with beans. Pasta and beans is a great combo and countless variations exist in Italy. You can make this vegetarian by using olive oil instead of 'lardo', which is cured bacon fat. Borlotti are the same as cranberry beans in America.
    For the pasta: 300g wholewheat or ordinary plain flour, 1 egg, and about 85ml of water (it will depend on the flour). For the sauce: 50g lardo, bacon fat, or extra virgin olive oil, one onion, 400g soaked borlotti beans (whisper it, they could even come from a jar), 400g bottled or tinned tomatoes (make them good quality), salt.

    I love Adriana’s gentle way. The way she matter-of-factly says to use an egg if one can be spared really belies the poverty endured in her youth. Like so many of these wonderful women they bear no bitterness. What a beautiful dish! Thanks for another great episode.

    What a sweetheart. Adrianna wore all her best for filming. It's lovely that there's respect for tradition. So much nicer than living in a disposable society. The origin of the name of the pasta is hilarious! Pasta e fagioi is one of my favorite foods. This looks luscious! You've done it again Vicky! Thanks for taking us along on your adventures. ❤❤❤

    My grandma (mother's mother) died recently, and I didn't expect to get so emotional about a video on such a simple dish. But seeing her reminiscing about being 40 while she's 89 years old hit me just-so. I might not have these traditions, but thank you to Adiana and the Pasta Grannies for making sure they get passed on to me anyway 😢

    Adriana is such a sweetie!! It was so obvious she enjoyed cooking for and visiting with you! I loved how perfect her sauce to pasta ratio was. That looked like a luscious dish of pasta and I bet it was filling! TFS and starting the weekend off beautifully! Sharon🤗♥️🍝

    Love the apron! Recipes like this one remind me of what I learned about poverty cooking from that wonderful BBC series, Italy Unpacked. It has made me appreciate all the nonas extra much.

    I'm from another country, but your cooking is the best.
    I'm desperate to be healthy, but I think eating is important. Both of my parents had dementia, so I quit my job and took care of them. Last year, they both passed away after 3 months. It was stressful. My parents passed away, and my body and my heart ached a lot. I got a brain aneurysm on my head and two brain aneurysms. I even had hypothyroidism, so I suddenly gained 15kg. I have to diet. Anxiety disorder Panic disorder I still suffer from insomnia. It's been a year since my parents died, but I'm still in treatment, but it hasn't been long since I started again. I started CZcams, took a walk, and traveled because I had the courage to share and communicate. Now I want to be healthy. I hope everyone watching this video is healthy. Take care of your health first.

    Strozzapreti became my favorite pasta this past year, but this is a way to fix it I haven't seen. I am vegetarian, and the beans are a nice way to get some protein in. I have made a Calbrian dish with chickpeas.

    Adrian is the most wonderful lady full of happiness, such a joy to see her at work. She really knows her stuff, so professional the way she made her pasta. This dish is not unlike Pasta e Fagioli except we cook the pasta in the sauce otherwise very similar, the north make Pasta e Fagioli more soup like but in the south where my family were from it is much more a pasta dish like strozzapreti. Great to watch thank you. Ramon x

    Adriana has an amazing kitchen, I hope her grandchildren like to visit and eat things like this. Her great-grandmother made some impressively fine and regular lace, too. Can't go wrong with beans, fat and salt of some kind, I bet this is delicious.
    I'd have to sub in something for the lard, of course, but kidney/inner skin fat is tricky to replicate in terms of what the slow release of very concentrated fat does for things cooking with it...probably adding oil in two batches at the start/middle would be closest and easiest, though frozen butter and letting more steam escape would also work if the butter was high-quality and high fat.
