Burrito bowls! So easy and so customizable to each person’s taste. It’s rice, beans, salsa, sour cream, olives, avocado, hot sauce, whatever really you want to top it with. It can be as simple or complex as you want to make. Also super filling and you can feed a crowd super cheap. I also make bean and cheese quesadillas pretty regularly. Flour tortillas are refried beans are not super hard to make and you can top with sour cream and salsa. So good! Also love bean soups and there’s lots of recipes online. Good luck 👍

North Carolina, USA - soft drink for carbonated beverages. For dish soap, just add water when you finish about half a bottle . We are fortunate in NC because we simply plant lettuce and other greens late in the Fall for harvesting throughout Winter. It's only in the 40's here now but will get cold so we add row covers to keep them going strong on chillier days (though lettuce may eventually fail.) We can grow Kale, Collards and Chard without row covers. And, we will harvest beets and carrots throughout the Winter under row covers. I like the idea of Microgreens in case our greens run out . I'm a non commenter typically but always watch your videos.

Re: ideas to use Beans and Rice...
White chicken chili uses a larger amount canellini (or any white beans beans) as a thickener for the dish.
Mexican Piccadilly is great served over rice. Of course the old standby of chicken casserole. Taco casserole uses both black and red beans. Pasta De Fagioli uses Cannellini beans (or great northern beans). Refried beans uses pinto beans or black beans or a combo to use with all the Mexican dishes. We also use Spanish rice, in addition to refried beans, when we make our burritos in bulk and freeze. Taco soup uses both red beans and black beans. Chili con carne uses small red beans.
Mexican Slow Cooker Beans, Green Chile and Beef over Rice uses pinto beans. We add a layer of pinto beans to our Cowboy Lasagne/casserole. We also use pinto beans in our vegetable soup. We make lots of chicken and rice soup when cold and flu season rolls around. Of course we use red beans, black beans, or pinto beans in tamales. Broccoli and rice casserole.

Beans can be used to pad meat dishes, either in cooked or freeze dried form. Pinto beans can be freeze dried and reconstituted to make refried beans. Rice can be substituted for potatoes. They don't have to be used together.

Burrito bowls. Make them how you like but I make them with rice at the bottom, black beans next, some corn, tomatoes or pico, chicken, grated cheese and salsa. I make them as lunches and cook for the week. I also sometimes add olives just cause. For lunches I put them in microwaveable bowls and nuke for 2/3 minutes stirring half way. Enjoy.

In Australia we call fizzy drinks soft drinks. With the rice just make rice pudding, put about 1 1/2 cups of rice in a casserole dish add sugar and vanilla essence to taste, about 1 to 1 1/2 litres of milk, stir, sprinkle with nutmeg with dobs of butter. Cook in oven at 180 degrees Celsius for about 11/2 hrs. Milk needs to be just a little runny or it will end up dry when cooked. Serve with double cream or ice cream. Stir fry with rice, apricot chicken with rice, fried rice, chilli con carn with rice. Beans you can just add to soups and casserole’s. 😊

Sorry for the additional comment, but what most people don’t realize is that store mayo isn’t nearly as perishable as homemade mayo. It’s made so it’s safe to keep out unrefrigerated for much longer times.
AND… I use garbage bags instead of lids for my germination in my greenhouse trays. Not as brittle as the plastic lids, and I do so many trays. I just made inexpensive wire cages, if needed to keep the plastic off the soil and seeds. I also take them off as soon as I see any germination 😊

I am a first timer for the challenge and it has been going well despite the challenges we have faced all of December. My husband was in and out of ERs and then an almost two week stay in the hospital. Just got him home yesterday. I have a very, very well stocked home grocery store and freezers are filled. I will have to go to the grocery store weekly for milk, eggs, fresh produce and the sandwich bread that my family will eat for sandwiches only. We don't have a farm so dairy and some fresh produce is just what it has to be as far as "my rules". Otherwise, we will do our very best to just use what we have for two months.

I think a skill to add is tortilla/ flat bread of any ethnicity. They are so quick and easy and something to make that would be a fun family assembly line. Quick to do fresh but they can be frozen. And you can use any carb...I love squashes. One of those once you do it you can't believe you haven't earlier. Plus they are so good. A 3 person assembly line and a tortilla press can give you stacks of flat bread and then from that home made chips of any flavor.

For rice and beans, please look for some Indian dishes..
Chickpea curry - stir fry onions with some curry powder or whole spices and add boiled chick pea to it, cook for sometime and add coconut milk to it.. Adjust the thickness with extra water..
Beans and Squash curry - chop up any squash of your choice, boil it in water with 1 green chile for spice, when ready add boiled beans of choice, cook them together with some coconut milk, this can be made thin or thick by adjusting water and had with rice..
Rajma masala (pinto or kidney beans curry) - boiled pinto beans cooked in tomato onion puree with garam masala.. This is more like baked beans with spices and without meat in it, not sure if baked beans has meat in it, sorry if it doesn't!!!
Lentil soup or Dal - boiled lentils added to onions sauteed in some ghee or butter with 1 green chile, this goes so well with boiled rice..
Savoury Bean pancake (Bean Dosa) - Soak different beans of choice overnight, grind them all together with some fresh water making them the consistency of pancake batter.. (Optional - stir fry some onions and add to the batter..) Add little rice flour or semolina to the batter for the pancake to release properly from the pan.. Add Salt to taste.. Make them like pancake but little thin..
Sauteed beans - Stir fry some onions chopped up small, you can add spice if you need, just adding salt pepper is also good, add drained boiled beans of your choice (we normally do with brown chickpea or peanuts or black eyed beans), mix it all together, check for seasoning.. Growing up, this was the snack my mom made for us during week days when we got back from school.. :)
Beans and lentils stay good for many many years, we just vacuum seal them in jars or mylar bags. If they are more than 5-6 years, you will need to soak them for longer as beans become harder..
This challenge sounds very interesting.. All the best..

We love having canned meat on hand too. We are off grid, so we only have a tiny freezer and we rely heavily on canning to store a lot of our foods. I find having dry beans for storage is great, but I can up a batch to keep on the shelf so they are quick to grab and use without any planning. Squeeze bottles for the mayo! That is brilliant!!! Keeps people from putting dirty knives into the jar too.

Hello from Toronto. A great way to use your beans and squash is to make a hearty winter soup. Any combination of soaked beans. Sauté onions, garlic, carrots. Add large chunks of squash that could be easily mashed when soft. Add broth and beans and simmer until finished. Option to add any meat. Add salt and pepper to taste. The squash will add a great flavour and thickness. Very filling and warming.

UK here, we call it POP and when I was a child we used have (I think it Corana) pop delivered to the door in glass bottles like milk.
For me it always when you in Canada and USA talk about Cider when talking about apple juice as Cider in the UK is a alcoholic drink rather then just juice.

Here in the South all flavors are called drinks. Coke products, Pepsi-Cola products etc. are all called the same thing you call by brand or flavor.. Coke, Sprite, Rootbeer, Orange, Strawberry or Pepsi etc. A very popular brand is simple called Faygo but you have to fight over the red flavor.

Minnesota USA: It's pop ...also Zevia & Lacroix type drinks are okay to get a close recipe for with a soda stream. Regular pop type drinks like Pepsi, coke, ginger ale, etc. are not very well substituted... even the brand name Pepsi syrup for soda stream is what the kids call "mid." We haven't found the soda stream to be worth it but we really wanted it to be.

Making a humus but just with a mix of different beans is delicious and is a great side for rice bowls or just as a dip :) Also using beans for cakes is perfect. Black bean brownies and chickpea blondies (you can also use white beans). As a former high school teacher I can attest that teenagers love them ;)
