How The World’s First Burger Was Made At Louis’ Lunch | Legendary Eats

  • We visited Louis’ Lunch in New Haven, Connecticut and interviewed the fourth generation owner Jeff Lassen about the history of the restaurant, the story behind the birth of the hamburger, and saw how they make it. We tried the burger out and asked customers how it compares to new, modern burgers.
    Instead of buns, Louis' Lunch uses toasted sandwich bread. The burger patties are cooked to a medium-rare, no exceptions.
    Every morning, Louis' Lunch's patties are freshly ground with a special blend of beef. As for customization, Louis' Lunch has a strict ordering policy: Absolutely no condiments.
    Lassen says they still cook in the same original stoves that Louis' Lunch cooked in from day one.
    The whole restaurant is covered in etchings because customers are encouraged to add on to the history at Louis' Lunch.

      @@philipboardman1357 Fletcher Davis in the 1880s, Athens, Texas. Considering it was just a hamburger steak stuck between two pieces of bread of some sort, I imagine a lot of cooks came up with it on their own, just depends when.

      The Chicago Tribune, on July 5th, 1896, ran a story called 'In A "Sandwich Car"', in which they mention 'Hamburger steak sandwich, the meat for which is kept ready in small patties and "cooked while you wait" on the gasoline range'. And they talk about it as being 'a distinguished favourite'.
      So that's a direct reference to a patty in a sandwich, bearing the name "Hamburger", already being popular a few years earlier than the invention date claimed by Louis' Lunch.
      It seems it's not really a matter of conjecture about people *probably* having done it! Seriously, there are scans of old newspapers available to download - you can see for yourself in black and white.
      Well, black and a sort of off-grey...

    You can cook this at home. I bought every ingredient fresh, but i used the individually wrapped cheese slices and with sliced bread you really taste the flavor of the meat more that if you used a bun.

    Tried this place out on the way to New Hampshire. And the inside is quite interesting if you can find a place to put your burger and a bottled soda. Just remember to ask for the condiments when your order.

      There is a reason they don't use "actual cheese". It was tried and discovered the cheese never stood up to the heat generated by the oven.
      The Cheese-Wiz is used because it doesn't get destroyed during the preparation.
      If Cheese-Wiz doesn't appeal to you, fine. I'm the same way. I just had the conventional burger. And it was the first time I really enjoyed a burger, instead of a pile of condiments with a burger thrown in.

    The "no condiment" thing is an outdated gimmick. That sandwich has no acid to balance the hunk of meat with fatty processed cheese, save for the brief minute each year fresh tomatoes are in season and don't taste like cardboard. We know how food science works these days, that's why everyone makes a special sauce or relish. It reminds me of when my grandfather insisted he hated garlic, yet when my mom spiked his meal with it one time he said "that was the best pasta I've ever had" hahaha

    I've been there 2 times, but I've never seen a patty so well cooked like that. I always got the raw meat patties, even though I specifically asked for them to be well done. It's just a trap for tourists I don't recommend it

    When I was around 8 or 9, I started cooking and grilling. We didn't have access to the world of food that we have now. We still had people who were born in the 1890s (my grandparents included) that were eating things you wont see often on a restaurant menu today, i.e. swiss steak and liver and onions. I loved making hamburgers over the fire and would use a sharp cheddar cheese spread and bacon. I always ate them like that with grilled onions on buttered, grilled bread. I am going to make a tutorial on those burgers and some of my grandma's cooking from the early 1900s. Food is who I am! My grandma cooked for multitudes and so have I. Proudly!

      To make it even funnier. Nobody knows the real story. The common story is that a german salesman from Hamburg immigrated to the US and sold a bun packed with meat. The hamburger as you now know it (lettuce,cheese, tomato etc) is pure american. So yeah, the inspiration comes from Hamburg, but the hamburger isn't from Hamburg. Some claim the story like this diner and use it as a sellingpoint. But nobody knows for certain.       What makes you think that their rather sharp cheddar cheese spread is cheap, just because it's spreadable ? in any case, it's the meat flavor in this, not to forget the flavors from how it's flame-grilled that are the two secrets behind why it's a huge success, it's the 5 different freshly grinded meat cuts they use and then the upright cast iron broilers from 1898 that do the trick. These are not steam cooked frozen patties of cheap meat that need a lot of ketchup and different toppings to make it taste good. Ketchup would surely ruin the flavor.

    I like the burgers in the toaster sliced breads more than in the buns. With sauted onion, mashroom & white melted cheese on the top. Hold the pickles, lettuce, onion & tomato slices in the plate. While I'm eating my burger in a toasted bread slices, I munch on the the stuff in the plate.
    And for the sauce, I only prefer A-1 steak sauce.

    It's as good as they say. My buddy went to yale and when I'd go visit I'd have it. I eat condiments on everything and love a good bun. but you literally don't need it. I don't even understand how good it is but it's true. They hype is real. New Haven is actually a great food city.
