- If you have never had brown butter in a chocolate chip cookie, YOU ARE MISSING OUT. These cookies are one of my all time favorites and I literally make these cookies almost weekly. The combination of brown butter, chocolate, and toffee is one of dreams. I will give you a few tips on how to make these cookies not spread, but overall, a wonderful recipe from the BA (former) test kitchen.

//Ingredients (from BA's web-site)
1 cup (2 sticks; 227 g) unsalted butter
2 cups (250 g) all-purpose flour
1 teaspoon baking soda
¾ teaspoon kosher salt
1 cup (packed; 215 g) dark brown sugar
⅓ cup (73 g) granulated sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2 1.4-oz. (80 g total) chocolate toffee bars (I used Heath, but BA says Skor), chopped
1½ cups (216 g) chocolate wafers (I used 60% dark chocolate bars)
Flaky sea salt

Watched Rick make these a few months ago and instantly told my wife “we gotta make THESES!!!!” She’s a baker so I had a leg up on the process but I love your re-chilling of the butter … def helps with the spread. These don’t last long … especially on a bowl of ice cream. Oh yeah … Skor bars are hard to find … only at our local gas station. LOL … so … I started making my own toffee … yet to be tested in this recipe but soon. So good … great video!
I made these with Skor bars and chilled for 12 hours and waited until the next day to eat them. They are my new favorite cookie better than the ones I used to buy from the bakery!
I would like to see a bit more melty choc action in there! maybe it was there but just couldn't see it. I think i'm probably more keen on a slightly thicker cookie with that cookie dough squish middle also. These look tasty all the same
Thanks for the tip on cookie spreading, I'll have to try the brown butter chilling step and maybe chill butter directly in stand mixer bowl with ice bath (less dishes to wash 🙂). I love Chris Morocco's BA Best Choc Chip Cookie recipe but I've noticed that they can spread too. Great video!

They look like seriously tasty cookies! (I mean, I'm totally with you, can't go wrong with brown butter!) I'd probably go darker on the chocolate, maybe even to an 80%, just so the sweetness of the toffee can pop against it!
That’s a good point! I don’t normally prefer dark dark chocolate, but I will have to try it out!
How many cookies does this recipe make?
I usually get around 2.5 dozen, depending on the size of your cookies!
