  • Bánh Xèo (Vietnamese Sizzling Crepe) is one of the most delicious dishes in all of Vietnamese cuisine. We had the impossible goal of finding the "best" in the city. This is impossible to pick as there are so many varieties and so many vendors in Ho Chi Minh city. We narrowed are choices down to make it easier choosing to only focus on the large southern style. I can't say for sure we found the best banh xeo in the whole city, but I can say I found my favorite within a 20 minute drive of the center of the city.

      It’s sad 99% of Vietnamese restaurants are still selling food with the lack of hygiene. That’s because of the way they brought up in the culture.

      @@nocancelcultureaccepted9316 the Vietnamese DO wash rice, meat, beef pork bone, veggies where most Westerners DON'T. That's facts. Westerners especially the Americans never wash rice, and meat, vegetables go straight from grocery package right into the pan, Gross!! I've seen many Americans cook like that. I'm from the states, lol. Speaking of dirty or lack of hygiene in cooking, American culture is worse than the Vietnamese.

    I am still missing Anthony Bourdain. His friendly voice is so comforting. I always remember him saying, Vietnam grabs you and never lets you go -- R.I.P., sir.

    Wow! Used to come here for Banh Xeo in the early 70’s (before the fall of Saigon - 1975!)

    Another great video!
    I always liked bánh xèo in Vietnamese restaurants here in Seattle, but after I had it in Saigon I realized that I'd never really had bánh xèo... I never got to the places you visited but I kind of got hooked on a place more or less in "my" neighborhood, on Hẻm 335 off of Điện Biên Phủ, just west of the food street, Nguyễn Thượng Hiền. The constantly replenished pile of herbs had lots of unfamiliar plants in it; the most memorable was a crunchy narrow leaf with rounded ends, a bit curved crosswise, with a tart flavor. (Any idea?) I even learned to appreciate fish mint. Kind of (as long as it was just part of the mix). A far cry from the paltry little stack of romaine, basil and mint that you get at a restaurant in the US. The crepe was always really delicate and crispy.

    Vietnamese banh xeo, none of the Asian Korean crepes or Japanese pancakes come even anywhere close to the type of dough use in banh xeo, makes it so delicious. Especially when you wrap it with salads and eat it with nuoc mam diluted sauce. At one time, I made it with 4 burners going at home. The right banh xeo does not have a pancake taste to it, suppose to be light and crispy.

    The first place, the batter seems too thick and they drop a TON of beansprouts in one small area (gotta to spread it out for the perfect bite!) To me the batter has to be thin and crispy for maximum texture and flavor. The last place was really interesting and the use of the baby clams and rice paper for wrapping makes me think it's influenced by the Central region because don't they wrap everything in rice paper? LOL.

      @@tamhuy10 I grew up making banh xeo...we made ours differently than the ones I see on youtube. My mother used flavored ground pork, mung beans, and beansprouts. It's all added to the inside of the crepe vs cooking it into the crepe. With that said, I think they are still adding too much batter, which means the crepe won't be crunchy. Crunchy/crispy is what makes a good banh xeo. I mean, sure, if it's not crispy, it's still edible, but it's great when it is crunchy. Too me, thick batter is like thick bread...banh mi is great due to it's ratio of filling to bread factor (if the baguette was too thick, it throws off the ratio and the flavor).

    Wow, your production has been a lot better than in the past. As a descent VN in Thailand, I've tried this in a very thin version with bean sprouts, green onions, minced pork, and liver pate. Dip it in a sweet, salty, sauce.

    You got me craving for some banh xeo. My favorite is here in Orange County is at Quán Mii. It's comes with rice paper for wrapping. Its more on the crispy side and very tasty. Runner up would be the Banh Xeo at Thien An in Houston

    We eat this at home all summer in the u.s., but obviously we don't get all the same veg, since u.s. based. Love that he isn't a fan of the Fish herb (Rau cá), we grow it in our Garden, and I avoid that section ;) Family being from Vũng Tàu, know some of these all too well, great show and analysis.

    Chef i've had this all my life and every now and then in big get togethers my mum and folks make it all hand made, i was never particularly a fan since the batter reminds me too much of a pancake and its a tad bit sweet for me, but its nice seeing you enjoy the food of my culture!. I Had a question have you personally ever tried bo lat la with banh hoi or, bo bia personally those are my favorites growing up especially the way my grandmother makes bo bia, by slicing the eggs into thin strips as well as the sausage making it more digestable.

    Those all look quite good, however I still much prefer the middle region style, that you cut in half and roll inside rice paper and dip in peanut and liver sauce.

    you can find the middle style for 2.5-3 cents each in saigon, definitely is "must try" style, much smaller but crispier than the southern style

    Love your series, Chad. FYI: Miền Tây is not Southern region. It means Western region or the Mekong Delta and the area next to Cambodia. Miền Nam is the Southern region, the area around Saigon.

    There's a version of that in Khanh Hoa, which is called "bánh khọt" the smaller bite-size of bánh xèo, but tastier, recommended you trying it bud!

    pretty sure that the crispiness can come from the batter that containt beer. My mom is using light beer for batter and it always was very crispy. Pretty sure using a strong beer can make a difference, like a stout

    You should try the one in Thailand at a chain restaurant called "SEE FAH". It's very different from the authentic Vietnamese Banh Xeo, but absolutely amazing none the less.

    i am SO sad about Anthony Bourdain, it really hits a soft spot in my heart. I remember being a kid and watching his food show and falling in LOVE with the idea of traveling the world just to experience culture through the food. I remember his witty jokes about how the show's production team kind of lead the audience on with scenes and he blatantly states he hated how unauthentic it made the show feel, yet it was such a good show to watch. It makes me sad to see how it ended for him cause he wasn't too far away from seeing what could have been possible with youtube, YOUR CHANNEL IS EXACTLY THE TYPE OF SHOW ANTHONY WOULD LOVE, I KNOW IT. The pure genuine adventure and socializing with people, if he was still around he'd have one of the best food review youtube channels for sure for sure :((( I am glad to see food reviews channels give their flowers to him cause he was truly a gem to the traveling and culinary world
    P.S. I'd love to give a shoutout to Andrew Zimmern as well, who also had one of the best food review shows as well. Both these legends truly are the hallmark of what youtube travel-food blogs do today

    That is Banh Xeo Mien Tay. Banh xeo quang ngai, Banh xeo Danang, Banh xeo Quy Nhon is good.
    Bánh Khoái is similiar style in Hue. I love Bánh xèo mềm thịt vịt Quảng Ngãi ( duck meat, soft, white color and Bánh Xèo Tôm Nhảy Quy Nhơn ( lots of shrimp) . Bánh Khoái cá Kình , Mực is my fav dinner in Hue .

    the 2nd Banh Xeo you tried is actually a more authentic one from the West (or South of Vietnam). The batter is just slightly crispy, not so crispy because of deep frying. Banh Xeo from Central of Vietnam is more of deep frying but smaller in size.

    Controversial opinion: bánh xèo in central VN is better 😅 smaller crispier version in Danang with peanut sauce, super crispy version in Hue (bánh khoái), and more pale version sometimes with squid in Quảng Ngãi and Quy Nhơn

    In some pagodas they made vegan Banh Xeo for free and it was super delicious.

    In nha Trang, there’s these small bank xeo with squid….find it. Best banh xeo in the world and it’s a long wait to get a table lol

    I guess my main concern about food in VN is food hygiene and water.
    I remember when I visited last time my aunt who lives there was always concerned about me eating the washed vegetables as it was probably washed with tap water especially like eating Pho etc or like if ordering ice tea is the ice from purified water? So she always asked everything was blanched first for instance. Another was shellfish as she was concerned with Hepatitis contamination so I wasn't allowed to eat any.
    I'm excited to be traveling back soon to HCMC and seeing all the restaurants / food are you not concerned about the local tap water food hygiene? Just curious.

    At Banh Xeo 46A, they do charge about 60,000 more if they peel the shrimp for you (no tail, no shell, no legs, no head). I wonder if the other places you went will as easily do that. 46A serves a lot of foreigners so they're used to taking care of that. Places catering to locals are used to serving it with tails, shell and legs, so you'd have to make sure they'll do that for you. Me, no way will I eat shell, legs and tail. Sorry.
