Encounter? You could make a whole set with a tribe of awakened, mutated apes with each group of mooks led by a main Kong with different abilities. Start with Tiny as an advance scout that can use Reduce, her climb speed and gliding to escape or harass the party from a distance, Guard Captain Lanky an area controller with massive reach and Sentinel, tech specialist Diddy as a flying archer that unloads on the party while they deal with the cannon fodder, and finally a 2-stage fight with DK himself (a brawler with legendary actions and a cannon), where he resorts to unleashing the hulking and destructive but sluggish Chunky to cause chaos when he hits half health. You could even add in Cranky as a potion spamming alchemist and optional Funky boss as a paranoid and heavily armed recluse who lives nearby. Bonus points if you make the quest giver an obese nobleman with crocodiles as his house animal.
