I still need a pair of these for the QU-16 installed at the church I run sound for.

Unfortunately you can only run one of these. They only have a single Cat5 socket so no link out to run a second

Can I use this for a DiGiCo S21? And, if not, wich 8 inputs audio rack can use for this mixer?

No, this wouldn’t work with Digico. Digico normally uses Madi so you will need a madi stage box. I don’t know if any 8input madi stage boxes but you could search online
