      You could always portion leftovers for the freezer. That way you'll always have meals ready to go, just needs reheated.

    Love your little helper, all my grand children are grown and now waiting for great ones. Love this, potatoes and meatloaf all in the instant pot, doesn't get any better than that!     For those who don't have an Instant Pot rack and those neat pans to cook the meatloaf in, I figured out a way to get along without them. I made a meatloaf using 1 pound of HB and put into an 8x4" loaf pan. I balanced it on top of the potatoes on the bottom using 2 empty soup cans. I covered the loaf pan of meatloaf with tinfoil & made a hole about the size of a dime in the center of the foil. I pressure cooked it for 20 minutes. It turned out perfectly.

      Did you only do it for the 25-30 minutes? I tried it and the middle was still uncooked. Had to put it in for 10 more minutes 2Xs :( maybe I'm just doing something wrong

    I did this, but used my meat loaf recipe. I didn't have a pan that would fit in mine( I have the Martha Stewart version) So I made my own pan using aluminum foil. Turned out great!

    I’m so thankful for this video and recipe. I made this about a week ago but used another recipe and method. My meatloaf cooked and fell apart in the pot lol. It was mush! I am ordering an insert and using yours from now on.

    OK, so I'm 2 years late. I just got my instant pot & love your videos! I have been skeptical of each and everyone. I have no idea why, they're ALL amazing. I took your video & ran with it. I used it as a magnificent base & made the best meatloaf and cheesy mashed spuds ever. I made my mixture of ground beef and Italian sausage. I put in how much onion I like, etc. I didn't and don't have any additional pans so aluminum foil worked great. I used yukon gold spuds & used 1 & 1/2 cup chicken broth & used your time guide, plus 5 minutes for my extra spuds. I used a brick of Boursain cheese in my mashed spuds along with a little milk (for consistency) and voila, perfection. Please keep your videos coming. I'm trying the creamy shrimp alfredo, next!

    How timely! I made my first IP meatloaf and potatoes last evening! Obviously a different recipe (unfortunately I never met your grandmother!) and I quartered the potatoes before cooking and wrapped the meatloaf in foil. Put them on the trivet. It came out great!

      This sounds like a great idea, Tiffany! The meat didn't look completely cooked to me, but then again I've never used ground turkey in a meatloaf before. Maybe the color and texture was as it should have been.

    New sub on the instapot side of things!!!!!! Im reading into my instapot as I got one as a gift from my mother in law. Was a little intimidated at first because I don't want to mess up with it. But a lot of these look fail proof kind of like the crockpot recipes. I love that it cooks it so much faster!!!!!!!! I'm all about that with having two under two!!!!     We live full time in our RV and our oven isn't the best so my meatloaf ALWAYS burns on the bottom before the middle is cooked. I thought I would have to stop making meatloaf for the next few years until we settle down in one spot and get an actual house again, but no! Now I can not only make non burnt meatloaf but I can make mashed potatoes AT THE SAME TIME! Thank you SOOO much!

    I remember meatloaf from my childhood, my mother made it with 2 lbs of ground beef and 1 lb of pork sausage with onions and Worcestershire sauce and son tomato sauce and past, don't remember the exact measurements. But boy was it good!!!

    Hi! Thank you for sharing your video. Here’s a tip I found on another channel. Use a small bunt pan for the meat loaf! It will cook more evenly!
    My recipe is very similar. I use my favorite BBQ sauce instead of tomato soup. And add better than bouillon no beef broth to the turkey (husband thinks it’s beef)! 😉 Thanks again!

      I think it depends on 1) your budget 2) how many you'll be cooking for. I'm single and bought a 6 qt. 6-in-1 that sells for 79.99 at Amazon. Fortunately, I bought it during Prime Day and picked it up for 49.99. I could probably work with a smaller one, but I like to make enough for a few days.

    My mother use to cook the onions first and cook up a few strips of bacon and then make the meatloaf put the cooked onions into it and then put the meatloaf into a pan and put bacon cooked strips over it and man it was great..

    I don't know of anyone who doesn't use their hands to mix meqtloaf. Have you ever used rice in your meatloaf? Very tasty. You can also do both meatloaf and potatoes together by putting your rack on top of the potatoes and then putting the meatloaf loaf pan on top of the rack so those who don't have that special pan can still do it. Love your channel and recipes as always.

    Great recipe♥️
    I always sauté the onions before going in to the mixture! It gets a bit caramelised and more sweet. Therefore I also only use tomamopaste that also sautés with the onion. Less sugar! No ketchup.
    Instead of tomatosoup- use a LOT of tomatopaste. Even less sugar.
    I would also first combine the eggyolks (no eggwhite - it only makes the loaf more chewie (how do I spel that...😅?) ) with the oats (I would use breadcrumbs instead), the onions with the tomatopaste and all the spices. I would go bananas with a lot of oregano plus garlicpowder, parsley, salt and pepper. A splash of heavy cream. You can also add some corn to make the flavour a bit like greek keftedes. Maybe some parmesan. Yummy!!!
    Now the oats/breadcrumbs can swell and you get a good perception of that the loaf won’t turn dry when finished. The mixture and the meat of you choice should be almost half and half. A little less mixture than meat.
    This way you get the spices evenly mixed with the meat easy!
    Very yummy - and less sugar!
    On top - I would spread some cheese. And I would serve it with a spiced up yoghurt, say tzatziki. No sugar there either.

    Great, now I know how to get rid of the grease, but if you're doing one lb. or 2 lbs. do you put it for the same 25 mins.?

    Will the meatloaf still work since my lux instant pot didn't come with the pans?

    Oh dear!! I would not poke into the middle messing the meatloaf up but instead i think a digital meat thermometer would work better giving a more accurate, (no guesswork) temperature of 165°. Might wanna give that a try for the future, it's hard to tell by looking at meat that has tomatoey ingredients in it, is done. 😊
