I am a Chinese from southern China, Hong Kong, where the food we eat are much less spicy. Most of the food you eat in your video is not local Shanghai dishes but from other provinces...such as "Mala" is from Sichuan province and the beef noodle is from Xiangyang of Hubei province. Welcome to China and hope you enjoy visiting the energetic, magnificent and multi cultural but harmonic country.

    1. The turtle hanging on the bamboo pole should be called a soft-shell turtle. It is considered to be very nutritious by the Chinese, especially the wild ones. And why did the man hang it on the bamboo pole? It was because he wanted to show that soft-shell turtle was wild and big. I estimate that soft-shell turtle should be at least 400 RMB (about 50 Euro)/kg. By the way, soft-shell turtle is edible in China and is one of the expensive ingredients.
    2. There is a saying in China that if you eat noodles without garlic, the flavor will be half less. But you got the order wrong. You should eat the noodles first, then the garlic, and then chew them together. Based on the video, you just ate the garlic without the noodles.

Regarding the softshell turtle that appeared in the video, let me explain:
This is a common scam in suburban areas of cities in China. In China, wild animals are often considered tastier than farmed ones, and their prices are usually two to three times higher. Thus, some people pretend to be anglers who have accidentally caught large wild game and sell their "catch" on the streets. However, these are usually not genuinely wild-caught but purchased from elsewhere.
This kind of activity is actually not allowed, but it is very difficult to prove that they are engaged in selling or committing fraud, so the police cannot directly prevent them from setting up their stall. Of course, they would not want you to film them and leave behind any evidence.
Additionally, since COVID-19 was initially thought to have been caused by the trade of wild game, the Chinese government enacted a series of laws in 2020 to restrict the trade of wild animals, including most birds and mammals. However, wild aquatic creatures like softshell turtles are not on the prohibited list. Therefore, you might see such scenes on the streets, where sellers take a chance to sell and then quickly flee. This way, even if the buyer later cooks and discovers that it is not wild, they have no way to find the seller and demand compensation.
