As a Chinese I was also shocked by the turtle hanging there…….😮 first time in my life seeing this kind of thing. It is called soft-shelled turtle which is an ingredient and considered edible. But in markets the turtles are usually kept in water tanks. I am really not sure if it is for sale or a pet….
Most people would take a bite of garlic and some noodles, and chew them all together at the same time. It adds more flavor and zing to the noodle.

Additionally, since COVID-19 was initially thought to have been caused by the trade of wild game, the Chinese government enacted a series of laws in 2020 to restrict the trade of wild animals, including most birds and mammals. However, wild aquatic creatures like softshell turtles are not on the prohibited list. Therefore, you might see such scenes on the streets, where sellers take a chance to sell and then quickly flee.
