Spinach & Potato Curry Recipe | Aloo Palak Sabzi | Vegetarian

  • A quick and easy Spinach & Potato Curry recipe perfect for a weeknight dinner, ready to go in under 30 minutes. It's a classic dish that's healthy and yummy. Our recipe uses a little yogurt to add some creaminess, but you can skip this step if you prefer or use a plant based yogurt to make it vegan. Serve with roti, rice or naan and enjoy!
    This recipe serves five to six people, but it can easily be scaled up or down and the spices adjusted to suit your taste!

    Ingredients
    250 grams of baby spinach
    6 tablespoons of cooking oil
    1 finely chopped medium onion
    1 teaspoon of cumin seeds (amzn.to/3c7woNE)
    2-3 dry red chillies (optional)
    1 teaspoon of ginger and garlic paste (amzn.to/3bMcLdE)
    500-750 grams of New Potatoes
    ½ a teaspoon of turmeric (amzn.to/3reEetb)
    1 teaspoon of red chilli powder (amzn.to/30IERjO)
    1 teaspoon of salt (or to taste)
    2-3 liquidised medium tomatoes or 250 grams of chopped tinned tomatoes
    1 cup of water
    4 tablespoons of plain yogurt (or a plant-based yogurt)
    2 tablespoons of dry fenugreek (methi) (amzn.to/3fUcq9R)
    ¾ teaspoon of garam masala (amzn.to/3rNX9fc)

    Do you think possibly the spinach would work better cooking it in the dish rather than boiling it beforehand ? Keeps all the goodness.
    Dish looks great though

      You absolutely can skip boiling the spinach and adding it straight into the dish, the texture will just be different. Traditionally the spinach in the dish is very soft, but you can cheat this a little by cutting it up very finely instead and add it straight in. Thanks for the comment! ❤️

      You can skip the step! We like to boil the spinach because it makes it super soft.

    Unfortunately my Pakistani husband doesn't like it, he never ate and never heard about the spinach with yogurt... not a good combo, sorry 🤷‍♀️

      No need to be sorry, sometimes we like different things! As stated in the description, you don’t need to add yogurt - it’s for creaminess and can be skipped if you wish. Our recipes are our own, so they may be a little different to what you’re used to! Especially because we’re not Pakistani :) Thanks for your feedback!

      My mum is the same but after ive cooked and she tasted the different type of food she loved ut like she didnt think saag and keema went together but she really liked it
