Will you share that pork belly recipe?
Ingredients
2.4kg (5 lb 4 oz) piece skin-on pork belly*
sea salt
Steps
Step 1
Use the tip of a small sharp knife to poke lots and lots of holes all over the pork belly skin (as many as you can!). Place the pork onto a baking rack sitting on top of a baking tray.
Step 2
Liberally sprinkle with salt. Place uncovered in the fridge overnight.
Step 3
The next day, preheat the oven to 220°C (425°F).
Step 4
Use plenty of paper towel to pat the pork belly skin until it’s completely dry. You’ll have wiped most of the salt off, so sprinkle it with a little more. Then place in the oven to roast for 40 minutes, rotating the pork after 20 minutes to encourage a more even crackling.
Step 5
Then turn the heat down to 150°C (300°F) and roast for a further 40 minutes or until the crackling is crisp all over. Remove from the oven and rest for 10 minutes before slicing. Enjoy as is with your usual roast pork trimmings, or make my meal-prep
FOR THE VEGETABLES
1/2 cup Jalapeño, sliced thin*
1 cup Daikon, Julienne Sliced
1 cup English Cucumber, Julienne Sliced
1 cup Carrot, Julienne Sliced
1 cup Red Onion, thinly sliced
FOR THE PICKLING BRINE
1/4 cup Sugar
3/4 cup Water
1 1/4 cup Rice Wine Vinegar
1 teaspoon Kosher Salt
PREPARING THE PICKLING BRING
Combine the sugar, water, rice vinegar, and kosher salt in a small saucepan. Taste when the sugar and salt have dissolved, before the mixture boils and is too hot to the touch (take care not to burn your mouth). Add additional salt or sugar if desired.
Heat the mixture to boiling over medium high heat. Then, remove from heat.
PICKLE THE VEGETABLES
Pour the pickling brine over the vegetables.
Cool the mixture to room temperature, then seal the jar with the lid and transfer to the refrigerator. Chill for at least 2 hours before serving to ensure the best flavor.
We slice and serve on Hawaiin rolls and mix bbq sauce with sweet chili sauce.
