Black Bean Cheese Burger & Roasted Potatoes

    This bean burgers recipe is made with black beans, walnut, and carrot for a perfectly textured meatless burger. These black bean burgers are loaded with bold flavors and make a hearty option for vegetarian & vegan.
    Oven roasted potatoes are an easy side dish that goes with pretty much any meal!
    Ingredient:
    • 1 onion, diced
    • 1 sweet paprika or bell pepper, seeded & diced
    • 1 medium carrot, shredded
    • 3 cloves black garlic or regular garlic, minced
    • 70 g walnut, chopped
    • 300 g cooked black beans, drained and rinsed
    • 1 ½ Tbsp. tomato paste
    • 30 g bread crumbs
    • 1/4 tsp chili flake
    • 1 tsp coriander seed
    • 1 tsp salt
    • 1 tsp turmeric
    • oil
    Instruction:
    1. Place a large pan over medium heat and add 2 tbsp. oil. Once oil is hot, add in onion. Sauté for 5 minutes or until onions are translucent.
    2. Add the garlic and stir until fragrant. Then add tomato paste and fry for few minutes.
    3. Add spices and stir. Then set aside until completely cool.
    4. Add shredded carrot and walnut and stir.
    5. At the end, add paprika or bell pepper and stir. Then set aside until completely cool.
    6. Add the cooked black beans to a food processor along with the cooked mixture, bread crumbs. Process until well blended and just a few bean chunks remain.
    7. Put on a plate and cover it, place in the fridge for at least 2 hour.
    8. Shape the mixture into 9 patties.
    9. Heat some oil in a non-stick pan over medium high heat and fry the patties for about 4-5 minutes on each side until golden brown and crispy.
    10. If you want cheese burger, add cheese slices to the top of the patties and cooked for few minutes.
    11. Serve on hamburger buns with lettuce, pickles, sliced tomato and dress bottom and top buns as desired.
    12. Enjoy!
    Roasted Potatoes Ingredients:
    • 4 medium potatoes
    • 2 Tbsp. oil
    • 1 tsp turmeric
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • Chili flake
    • 1 ½ tsp salt
    • 2 Tbsp. bread crumbs
    Instruction:
    1. Preheat oven to 200°C.
    2. Cut the potatoes, do not peel them.
    3. Toss potatoes, oil, spices and bread crumbs.
    4. Place on a baking sheet and bake for 30-35 minutes until browned and tender.
