@JC為什么没有开粉浆,水份的比例,可否请師傳写用多少水??谢谢
前年我们餐馆的肠粉,最后产品和这差不多,但比这漂亮。做法也不同。我们的拉肠粉的那个坂比这大差不多一倍,且带很多蒸气空 (而不是平底), 且不能拿开。做时在气坂上铺布。做完把布泡在水中。因为有蒸气孔,且坂不能拿到一边 (一直在蒸汽上),所以肠粉热得比这快得多。所以要求动作飞常快。特别是铺粉浆的时候,要求几妙完成,否则那么薄的粉浆就被蒸熟了--你就没有办法补洞(即坂上的粉浆要求铺得绝对均匀,不能有洞,且要很快完成)。 原因很简单,忙的餐馆要求出单快!
