    Here is where I expose scammers who are out to get your money. There are lots of fake knife companies out there, and all of them are doing the same thing - they are showing you knives made by someone else, and selling you junk.

      Thanks for the warning buddy. You might have just saved me 70 bucks. I had my eye on the promithi series. Mainly cus their handles look super cool.
      I’ve had a lot of luck from eBay tbh. Thank goodness most my fellow chefs and or most people. Think that if their knife is rusty and started to pit. Or has big knicks or a broken tip. They sell
      them for really cheap. Cus they apparently have no skill. Making a rusty knife have mirror polish is surprisingly easy. Tedious. But easy. Also I’ve noticed with eBay. If you aren’t paying any money for shipping. That’s also a red flag. Any time I’ve gotten lucky and got a high carbon. Single bevel. Only kanji on it. No English whatsoever. I always have to pay 20 for shipping. No more no less. I imagine it would be a different price depending on your location. But I’m in Florida. So it’s very far from Japan. So I get uncomfortable when they don’t want an arm and a leg for shipping.

    Fun fact: There are only 100 fully licenced blacksmiths in Japan that use traditional techniques, so it definitely makes sense how those 100 blacksmiths are able to mass-produce the exact same knives as well as other "traditional" knives.

    "Huusk knives are made from stainless Japanese steel using the same traditional techniques that blacksmiths used to forge samurai swords." This could only be written by somebodey who has no idea about the properties of steel or is targeting the people who don't.

    I was enthralled when I visited Harrods (the top department store in the U.K.) and saw a selection of Kai Shun Ken Onion kitchen knives. The price was very high, but I discovered that American sources online were more reasonable, and ended up importing a set from them, instead. Very pleased with them !

    Came here from watching a Huusk ad that popped up on CZcams. That company deserves some kind of award for how much bullshit and duplicity they could jam into one five minute ad. Absolutely shameless, brazen bullshit.

    Just recently decided to sharpen my own knives because I finally
    got frustrated enough with other options. I subscribed to your channel and with the help of your videos and some other resources I was able to get very satisfying results on my first try!... Got a burr on both sides and was able to cut paper hahaha... I can see the edge is still pretty uneven and obviously I need a lot of work but it’s way sharper than any knife I’ve used in a long time. This channel definitely helped give me the confidence to just go for it. THANK YOU!
    One thing I noticed is that the knife kind of bites into the cutting board now. Is that just because the edge isn’t smooth because of my poor beginner technique?

    Very nice and timely video. I was looking on Amazon for a Japanese chef knife yesterday and had to set the minimum price filter to $95 just to get the BS sites off my screen.

    Hey Ricky. I thanks for your content and your videos I'm slowly learning how to sharpen thanks to you. Question: I'm majorly confused about the switch from sharpening to a polishing stone. I've seen some videos of people creating burr again and again while switching from 1000 to 5000 to 8000 etc. Is this a viable process of sharpening your knife or should you approach the polishing process and sharpening process differently? Could you clarify this? Also, I'm confused about stropping and deburring. When should you stop and why and is deburring the same as stropping?

    This is q good warning. I have been shopping for a Japanese knife recently and I have been getting a lot of ads for Kamikoto, on FB especially. It did look suspicious. Being a Japanese, first of all, the name doesn't sound real Japanese to me. I don't think we read those two kanji together "Kamikoto". So that is a fake word, and fake reading of the kanji. Plus, it definitely doesn't sound like a person's name like most other Japanese knife makers are named after such as Masamoto, Masahiro, Misono, etc. Then, they don't have the kind of lineup that others would have and they seem to only sell sets. The knives come with a certificate of authenticity, which looks gimmicky. I saw a couple of unboxing videos, of people so excitedly opening the box and meeting their first so-called Japanese knife. The knife actually looks pretty cheap. I felt sorry for those people who spent $$$ and really believed it was a Japanese knife. They could have bought a real authentic Japanese knife for the money they spent.

      Yasunari Ishii If the person has lots of experience in shopping, even big brands with good reputation, he/she would read the opinion or watch the tests from the professionals as references before consider to buy. In additional, my personal opinion is big brands’ product is not definitely the best. And then, if the products from the brand is with good quality, they don’t need to over advertise them, even don’t need advertising. Finally, as I am a person who is experienced in buying Japanese knife, I have never seen any Japanese knife makers advertise themselves in internet or social media. For instance, Jikko cutlery, Sakai Takayuki, Teruyasu Fujiwara, Zanmai, even Tojiro.

    Thank you. There is a promotion called Hussk knives and they have a limited offer on YT ad videos right now. I clicked it and thought WOW That's A Deal. But being the person I am I went and did my own research and finding out Hussk is a fraud with knives made in China for the same price for only about $6 each compared to the Limited Time Only $34 saved me a lot of headache.

    You literally just described the Hussk Knife add 😂 I looked for a video exposing it because the add showed them slicing through food and it didn’t look smooth to me as I know how sharp knifes slice.

The biggest red flag for me is that the ad said the availability is limited, he sells the knives at cost because he just wants to get better at his craft, but the knives are 50% off because he needs to make space in his shop. They take 2 months to make, but he has so many he has to take a 50% loss of the cost to make it?
      It's frustrating to me. I want the knife that they are selling.

My eye so far has been looking at the Suncraft Elegance series. the kickstarter project knifes?     i like how almost everything he mentions is what kamikoto does except for the fake japanese vg10. their is cheap chrome-magnesium stainless steel but charge $300

    Glad I found your channel. I'll be looking through your playlists. One thing I haven't spent a long time in researching and haven't figured out is sharpeners. I have one sharpener that says regular blades and Japanese blades. But I didn't know if that was referring to the shape of the knife or the metal. If course the sharpener came with no info.

    My favorite things are when ads call it Damascus yet there's no visible pattern shown on knife, and when they say "it's super sharp" "limited offer" or "the knife stays sharp" 50 times in 2 minutes

    BTW - Huusk knives are mass produced in China. This has been admitted by their service centre via email. They claim the steel is from japan.

    Hi Ryky, not sure if you addressed this but was wondering if you have any resources on which knife makers in japan are some of the best and which one to avoid. Also how to find reputable and or independent knife makers.
    I’ve seen some online as having existed since feudal times but are now pretty corporate so don’t know who to trust when I go in September and I want to buy from a reputable maker.
    I feel like a shop like aritsugu is now all about the tourists and I don’t want that feeling when I walk into a shop.
    If you haven’t made one maybe a video guide would be great on your channel in the future.
    Love your videos by the way I learned a lot and recently sharpened my dad’s knife I inherited and repaired my global nakiri

      I buy knives every year in Japan. My latest purchases were in Sakai (Osaka Prefecture). It's nice to visit a shop that caters to foreigners if you don't speak Japanese. But, if you either speak Japanese, or are ok with limited English communication there are tons of shops that sell high quality knives. In fact, I think it would be the exception to find any that carry poor quality.

    I can't afford those expensive knives, though. Been using local made knives my whole life. What's important for me is to know how to take good care of them. And how to sharpen them of course. 🙂

      knives do NOT need to be expensive to be good,.
      BUT no amount of sharpening is going to make a poorly designed knife, or a knife with a bad handle, or a knife with poor steel, into a good knife.
      There are PLENTY of great inexpensive knives.

      Eshan Just get yourself one really good chefs knife, that feels comfortable.
      In reality, you’ll use that for a majority of things instead of switching between that and others

    Just wanted to point out, that while what you say about VG 10 is true, there are companies that use it outside of Japan, an example would be the Swedish company Fällkniven, however, unless you find a fake fällkniven, they won't come cheap.

      There are thousands of knives, from a ton of manufacturers, made outside of Japan that uses vg10.

      I believe many companies use many types of steel outside of Japan...
      I think the point was that if you see a 20$ knife, advertised as VG-10, it is probably not VG-10 as it would make no sense.

      Great point! Hitachi and the rest of the Japanese industry has made it easier for companies like Zwilling (Miyabi) to produce inside Japan rather than shipping elsewhere, but that's not the same thing as a strict no-export policy.
      A strange demonstration of the point: Fällkniven manufactures in Seki, despite everything about the brand that tells you it's a Swedish knife. It's not that they can't export the steel, it's just easier to get a reliable supply and there are shops still able to produce what's needed.
      It's pretty darn expensive (and/or slow) to make knives in Japan, but there's a market for the legacy and I don't doubt that the makers there will keep things going (maybe on a smaller scale) for as long as they can.

    I agree with your points. However Xinzuo actually does not claim to use japanese steel and their product description is giving you very exact steel types for outer layers and core. I bought one, and while you cant expect a 50€ knife to outperform a japanese handcrafted knife, the performance is really nice and the steel feels pretty good while sharpening.

    hey ryky, I was wondering about your thoughts on knives that are 50-75 percent off or even more. My question is does this still apply to dalstrong? You seem to enjoy their knives a good amount and get a lot of love from them as well but on amazon their shogun chef knife was "originally" about 360 dollars but says it was cut to 130 so are they also a scam too?

      dalstrong knives are NOT discounted 50-75%.
      They have a relatively high price compared to their quality, and only discount them rarely and when they do it is in the 10-20% range.
      Dalstrong are NOT great knives. They ARE made in communist China. But they do not misrepresent their product. They charge a fair price for a fair product. Ryky is coming at this from the perspective of a sharpener. He is open that he is NOT a working cook or chef. back when he made those dalstrong video, he did not have exposure to knives like Yaxell, Miyabi, Shun, and Masahiro like he does now.
      His recommendation of Dalstrong is based on value for a home cook. NO ONE would consider them in the same breath as shun, miyabi, yaxell,mcuesta, etc. I'd NEVER recommend one to a working cook, and if you go to ANY page that working cooks post to, you will see anyone who admits to owning a dalstrong gets TONS of grief.
      But they ARE a good choice for a home cook. Part of the reason they are overpriced compared to comparable knives is because you are paying for peace of mind and idiot proof customer care. I recommend dalstrong to home cooks all the time!

    BamaBass has a video on them and uses them. And so do other youtubers that I’ve watched and I wonder what your thoughts are about them.

    I'm not even sure if you can harden a steel knife to get a result of 71 on the Rockwell scale... And if you did and left it at that, it would probably chip, shatter, or snap fairly easy. There is a reason tempering is done to bring the hardness down after all.

      yes, you can, and a company that ryky and I know might be making one soon.
      The knife will feature a powdered metal metalurgy so it is not super delicate. I haven't tried one but I have tried a tester from another company with the same steel.
      But yes, usually hardness and ductility are inversely proportionate.

      @@LeYi CZcams kept showing me these kamikoto ads, then I started seeing red flags right away. The music in the ads is CHINESE (chinese instruments), not Japanese. At the end of some of the ads, a man says "kamikoto" but the enunciation is not Japanese. No Japanese person would ever say the word "kamikoto" that way. That sounds more like a spanish speaker's accent and enunciation. A real Japanese company would not do any of that; but they thought no one would notice.
      Kamikoto's website keeps parroting "Japanese steel," and goes on to say " Kamikoto's blades are handmade by a select group of experienced craftsmen in Niigata, Japan." Yeah right, just like Burffection warned. Then this is the killer, their website goes on to say:
      "Yanjiang, China - a town with over 1,000 years of knife and sword making heritage. Today, Yanjiang is the leading center of Japanese-style knife forging, polishing and balancing - where the Japanese legacy is preserved, and carried on, with reverence for the skill of the knifesmiths who evolved this craft centuries ago."
      So they are NOT Japanese knifes, these are "Japanese-style" knives. And NO, Japanese legacy doesn't need any "preserving" in China by low-wage factory workers.
      TOTAL SCAM.

    Thanks to you, I bought my first Japanese knife, as I have decided to go vegan for a whole year and am doing all my own cooking. I bought the beautiful Tojiro Oboro Petty from Burrfection, it arrived today, and I love it, but I am thinking of going back for the Nakiri, Santoku and Gyuto so I don't unnecessarily dull the petty using it for all things.

    Hi Ryky, I have some questions. Does Dalstrong use real Japanese VG10 and AUS 10 steel? Where were Dalstrong knives made? Some of their knives have almost the same handle design as a Chinese knife brand name Tuo. Are they actually from the same manufacturer?

      Dalstrong are made in communist China. Yes that same factory makes dozens of brands and OEM's of which dalstrong is only one. Dalstrong are priced higher than the same exact knife off the same exact line, but you are paying extra for SUPERB idiot proof customer care.
      Dalstrong USED to use legitimate VG10. they no longer are allowed to.
      They are currently buying Japanese AUS10 but there is a chinese equivalent and the same company makes dozens of brands and I AM concerend abut bleed over. While only a mediocre quality knife, Dalstrong is an honest company. I am 100% sure that they spec Japanese AUS10 and theat they make every attempt to verify it's legitmacy. However, you know communist chinese companies....... I am sure that Dalstrong would make it right IF there is an issue. that's why you pay so much more. Not for the stupid embarassing swag. You buy it for the peace of mind vs other Chinese knives. But why not buy a FAR better quality knife for about the same price point (unless you are a complete clutz)
      Both brands are made by the Shi bah zi group which DOES hae a reasonably good reputation, but not all look alikes are made by shi bah zi. Tuo knives are pretty good. Id take one over a dalstrong or zeelite ANY day,. But again, for only a little more money, you can get a Japanese knife? (unless you need idiot proof customer care)

    There are two knives in my kitchen that I know were made in China. The cleaver was $30, and the Nakiri was $20. Both are stamped Made in China. They are rugged. Thick matte finish stainless steel, wooden handles, brass bolsters. They are designed for heavy use and hold up well. They require infrequent sharpening. They aren't pretty, but they certainly do the job. Company is Winco. Bought them in a Kitchen Barn store in Virginia Beach, VA.

    I've watched your videos,, you seem honest and you words are true, when you said in this video that no sharpening need was bs ..I subscribed.. this being said I'm a carpenter that turned cook and am looking for quality knives, any advice is appreciated

    Hi Ryky I have a carbon steel knife aogami super. I was told that carbon knife react with the food you cut which leaves metallic taste. Because of that I am apprehensive of using it on fruits. I only use the knife for food that I will cook later but food that I will eat raw like cantaloupe or apple am nosy sure if I could use carbon knife on it. In your experience have you used the reactive carbon knife to cut fruits and acidic food and have you notice any metallic taste in your food?

      Not Ryky, but I have some aogami knives. If you let a patina (darkened surface) develop it'll help compared to scrubbing the knife every time you use it. Some old-school chefs even used to "rest" their knives after cleaning.
      Will you taste it? Depends on your sense of taste. I can smell non-stainless steel while I'm using the knife more than I can taste it. (I can also distinctly smell brass and copper, it's beautiful but I can't stand having that stuff on handles and have to wash my hands after handling it to get rid of the smell.)

      Andy, carbon steel isn't poisonous. It CAN leave a slight flavor to food, but it's highly unlikely and highly subtle and completely safe, even on high acid fruit like grapefruit.
      The person who told you that may be making an excuse because they are jealous of you and wants to minimize your nice knives.
      I personally wouldn't use it on lemons or grapefruit, buy you can with almost all fruit and certainly meat and most veggies.
      Also as jacksonknives said, you can purposely build up a patina on the edge or the whole blade depending on how it's constructed and it will be a barrier. I agree with him, that I smell carbon steel more than I taste it, (and I'm an semi-retired chef)

    Yeah dude have you seen that Huusk knife scam? I saw an ad and they claim it was a "banned" knife and "thousands of people" signed a petition to get it back, and the clips they show of a knife cutting things isn't even the same knife. It's insane that this is even legal.

    I was gifted a set of a Kamikoto knives for Christmas... As a gift, are these knives okay to keep around or are they complete trash? I currently have a Shun Blonde Chef and a Miyabi Black Chef that I pretty much use everyday. The Kamikoto set came with a single bevel clever, pairing, nakiri, santoku, and whetstones. I really want the Masamoto KS, but my wife would probably kill me if I sold the Kamikoto set she gifted me. I need help!

    First brands that come to mind: Misen, Kamikoto, Dalstrong.

      yes, misen and Dalstrong (and zelite, okmi, zhen, tuo, etc ARE communist chinese but they do not try to misrepresent the country of origin. And while it might be arguable that shogun is a Japanese name, Gladiator is a roman (and other areas) name and no one mistakes the gladiatos for roman.
      Missen, dalstrong, zeelite, okami, zhen, tuo are NOWHERE near the quality of Japanese knives, but they can present a good value. For instance, even though dalstrong is over priced, they offer idiot proof customer care in exchange.
      Missen aren't bad.
      Tuo isn't bad at all and is probably a step up from dalstrong and zeelite and at a lower price. Zhen is interesting because they are sold to wood worker hobbiests and you can put customer handles on it for an incredibly low price. Chinese knives, in of themselves are not bad, (but they usually feature production numbers over quality). it's the marketing companies that are usually the rip-offs making the false claims.
      Kamikoto is just a ripoff. And there are tons more brands. the facotries crank them out by the tens of thousands and an entrprenuer (like dalstrong or zeelite) just has the mfgr put on their logo and swag and resells it

    I sharpen as a pro. 150-200 knives a day at farmers Markets. and yes I get them sharp!
    I see these fake knives several times a day. Thank god most of the buyers realized they were getting lied to but $35 for a set was their budget and that is what they got. The only sad story was a lady who went to Sakai on tour. She bought a once in a lifetime souvenir, A great Japanese knife set. She was going to bring it to my next market for sharpening. I was looking forward to seeing her knives. The next week she brought me her knives, "Global". I was stunned but thankfully I covered my disappointment and told her every positive comment I could come up with. She left with sharp knives and her heart was full of pride.

    I have recently purchased a couple of ZELITE INFINITY Alpha-Royal Series knives and a set of DALSTRONG Steak Knives Shogun Series all in AUS 10 V. I knew they were produced in China when I made the purchase but I really wanted the AUS 10 because I really hate a dull knife. What do you think???

      I do own a Microtech Ultretech and a Protech Godfather along with several other very nice pocket knives but I wanted some high quality steel in a kitchen knife.
