The seam you called a french seam is called a felled seam. A french seam is when you sew it first with wrong sides together, trim the seam allowances, and then sew it with the right sides together so all the seams are enclosed :)
in my sewing guides a felled seam is something else. a felled seam is where you fold one seam allowance over the other and sew them both down to the outer fabric.
the thing where you fold the seam allowance in half and sew it down is a vintage seam finishing I've seen in my readers digest guide to sewing but I can't remember if it has a name. I do it occasionally cause my main machine only does straight stitch.

Absoutely LOVE this dress!!. Would you consider doing another video on useful dress making tips you've picked up?. And have you ever used a PDF Pattern? I'm in the UK also and find it hard to find the pattern I like complete in paper form, seems most of it is PDF now :(.
