We say most holy because holy is title for saints and she is above saints. In my language it sounds natural. I agree that God is only to be worshiped. And this prayer is said in liturgy in time of eucharist, she can't save us but she did big part in our ability to be saved, because she beared Christ so we can now earn eternal life.

Just that she can pray to God for us. When we say “Most Holy Theotokos save us,” it’s shorthand for “save us through your intercessory prayers.” Of course, Jesus is the only mediator. But we ask Mary and the Saints to pray for us like we would ask a friend or pastor to pray for us. We certainly believe that it is God and God alone who has the power to save us. You should know that English people were orthodox Christian until 1066 and then English king Harold is an orthodox martyr. They were fighting papists Normans.
