【材料 Ingredients:】
底筋面粉 Cake Flour - 100g
无盐牛油 Unsalted Butter - 100g
砂糖 Castor Sugar - 30g ( Butter 牛油部分)
砂糖 Castor Sugar - 60g (Egg White 蛋白部分)
牛奶 Milk - 30g
鸡蛋 Egg - 2
烤模尺寸 Baking Mould:7" x 3" x 3"
烘烤时长 Baking time: 160°c for 40 minutes

【Tips 】
* 牛油必须先室温软化
* 面粉与牛油混合时避免搅拌,用切拌方式防止面糊起筋
* 蛋糕可以在烤至10分钟左右时取出用利刀在中间划一条线,再继续烘烤~
* 蛋糕必须从模具取出放凉以避免在模具中产生水气
* Butter must be softened at room temperature
* Mix the flour with batter with fold method]
* The cake can be taken out after baking for about 10 minutes, use a sharp knife to draw a line in the middle, and then continue to bake ~
* The cake must be taken out of the mold and let cool to avoid produces water vapor

Yes, it's ok, btw, If egg white sit for more than 10 minutes, they lose stability start to start to deflate.

牛油蛋糕打牛油时是否要用低速?我每次做都卡油,很气馁!牛油软化适中,没有过度,我都用中速打大约7,8分钟,加鸡蛋时也没有油水分离,所以都不懂是什么问题导致卡油了!

应该是你的烘炉温度比较高,可以试试调低一点温度,延长烘烤时间哦~

我用的是kitchenaid hand mixer, 9 speed. 建议用什么speed属于低speed打发牛油和糖呢?
我没用过这款mixer,不能给你具体建议,但是一般用最低的就行了,可以避免打发过度~

对的,一般上蛋白要是消泡就没办法长高,要注意搅拌手法和蛋白打发程度哦~

第一次做牛油蛋糕失败了。蛋糕长不高,而且里面有一层油,像是不熟。但是蛋糕的上层跟下层巳上色了,请问是错在哪里呢?

如果我用圆形9寸的模具这个分量x2那么火应该再小时间方面要加长吗?
温度保持,烘烤时间建议加长哦,可以用牙签插入蛋糕,查看是否已经熟透~

Sry that unable to advise, I never try this recipe with self raising flour. Self raising flour contain baking powder where this recipe use egg white as leavening agent ya :)
