Making a Vieux Carre

- Brian and Jason can barely say "vieux carre," much less make one, so Trever is back to walk them through it.

To make a vieux carre, what you'll need to do is:
* chill your glass
* pour an ounce (30 mL) of rye whiskey into a yarai mixing glass
* pour an ounce (30 mL) of sweet vermouth into the yarai
* pour an ounce (30 mL) of cognac into the yarai
* add 2 dashes of aromatic angostura bitters
* add 2 dashes of aromatic peychaud's bitters
* add large ice to the yarai and stir
* empty your now chilled glass
* strain the drink into your chilled glass
* add a bar spoon of bénédictine
* garnish with a lemon swath
* drink

I just bought a house not too long ago and somehow managed to have the previous owners leave the bar. I have had zero funds since buying the place but have family in New Orleans. Ever since I've been following modern rogue videos I have been able to get my bar running and people tipping me because of these techniques. I've been able to build my bar because of you guys and look classy while doing it. You two get free drinks at my place anytime!
The cocktail is delicious, the education is excellent, and the magnet board behind Jason is just perfect.
As a chemistry student, drinking something out of a beaker is something that I can't mentally do.

Well, as a student I follow the *Biggest, Strongest and Cheapest* drink policy.
you are wrong about the port though at 2:37. Port is a young wine where they add distilled (high alcohol) wine too, this increase in alcohol content kills the yeast in the developing wine and leaves some of the unfermented sugar in the young wine. That is also why prot is much sweeter than wine is. So it is not just slightly reduced wine but a mixrture of fermenting and high alcohol distilled wine. I'm a bartender (albeit a relatively new one) and I love learning about cocktails, especially if they have a history behind them (as far as an exotic origin, or highly specialized ingredients) big thins up on this one Modern Rogue!

Just mixed myself one of these. With the rye whiskey and the peychaud's it reminds me a bit of a sazerac.
That is a cool way to clean the beaker, just having a disc that when you press down on it it rinses it out.

Point of reference, port wine is not reduced red wine, it is a fortified wine from Portugal where in a partially fermented red wine is spiked with neutral grape spirits (a white brandy if you will) to up the alcohol content and kill off the yeast and leave a fair amount of residual sugar still in the wine, thus keeping it sweet. It is then barrel aged, which will result in a certain degree of evaporation loss, but it is not distilled or intentionally reduced.
My understanding is that port is made by adding a spirit during fermentation which stops it from fermenting, while adding alcohol. Port is sweeter cause less of the sugar is fermented due to the fortification.

I understand where your mind is, Brian. It goes lower when going from wine to brandy because you would lose water and the level would most likely go lower.
during napoleons era people wouldve been drinking distilled beet spirit. i only know of one company that makes if these days and they recently sorta kinda stopped production till they can find a larger distillery to work with, whole problem with spirits taxs where in live, anyways the company is called the toronto distillery co. they normally make whiskey/ moonshine(unaged whiskey) however they also did a gin and the beet spirit.
however im sure if you email them or something theyd probably be willing to help you out if they can. torontodistillery.ca/products/organic-beet-spirit
then you could bring it to this guy and have him invent a cocktail for the channel :P
anyways the toronto distillery co is planning to resume production as soon as they can get sorted into a new location or have a distillery produce for them to their standards. or if a graduated spirits tax comes into affect for ontario like it has for other provinces in canada then they can resume production.

How does this compare to a Manhattan?
Yarai is a cut pattern, usually on a mixing glass, it is not the name of the vessel.
Yarai is completely optional, I wouldn't recommend anybody to search for yarai at all, so many bad yarai glasses abound because of the trend, I recommend to search simply for a proper mixing glass with heavy base, and it should be proper, because they tend to break, from a reputable source, yarai on internet hardly ever comes from reputable source, good Yarai can cost upwards of 150-200€ Anything less is wasted money because it WILL break from normal use, sometimes on the first try.
