If a theif is good enough, you actually wouldn't feel it. No matter what you may think, especially when your there in the moment and the one with the spot light, if they can distract you then they got you.

An actual understanding of body language wouldn't tell you whether he definitely knows or not in this case, but it appears to suggest he did, as he does glance in the direction. There's a couple things this could mean, but as he did not look afraid whilst looking away from the face of the man on stage, it would appear most likely thst he knew what was happening.

Every move the guy does has a purpose. The second he grabs the kids wrist...he's working at the watch clasp. Watch his fingers closely...the entire time his hands are around the wrist...the fingers are moving.
First he starts with what the kid assumes is the trick...moving the balls. But that's misdirection. Then he grabs the kids non watch hand. This is to get him used to his hands being around his wrist. The kids guard has now been let down. Which makes him more comfortable so that he won't notice what happens next. Then he grabs the watch hand and does the same movements as he did with the non watch hand. This starts the real trick of removing the watch. The kid doesn't notice because he thinks the guy is just doing the same as he did to his other wrist. Then he gets the kid to turn his hand over. Less chances to be noticed that way. He keeps eye contact with the kid to keep him from looking at his hands and wrist. He shakes the wrist..what 3 separate times. Each of those times is to misdirect the kids attention. He's literally asking the kid if he feels the red balls leaving his hand. What the guy is ACTUALLY asking...is if he feels him playing with the watch. Kid says no...so he continues. When he finally pulls his hands away...the watch goes with them. And then while still holding the kids attention...he takes the balls away and says things like "if I take this and this...and if I take this and put it in my pocket..." and then puts the balls in his pocket....he actually just pocketed the watch at the same time.
Everything he does has a purpose through out the entire trick.
