    This is still used with white or green tea? How do you make sure the clay they source is not contaminated with any toxins, pollutants, heavy metals etc? Looks wonderful

    You seem to know a lot about water structure ... do you have a video that talks about that in specifics? That's rare to find people talking about. Do you mean beyond the texture it comes out of the kettle and into the bowl, or just simply it comes down well into the teapot? Do you mean the molecular structure somehow benefits in a way that is carried all the way through the process?
    Also, if you still have to use a tetsubin... what is the point of this kettle? Just to structure and refine the water? I have been trying to find an alternative to my borosilicate glass kettle that goes on an electric stove. Two reasons: I like glass but I feel like it loses heat quickly and could be bested by another material. Secondly, I feel like the electric coils of a stove probably screw with water. EMF radiation or something, just my gut.
    I don't really like stainless steel, it turns me off as a material... but the Stagg EKG is really convenient.... that combines two things I don't like though.... stainless steel and electric heating.
    What are your thoughts on this? What about fine silver kettles vs clay? I would love to know so I would be pleased to see a response. How does silver effect tea if it is 999 fine silver?
    I'm really looking for the traditionally best way to boil and prepare water... there doesn't seem to be much information out there on what is used for such a measure. I mostly just see variable temp control kettles.

    Silly question here: while I know this pot is not for boiling, is it an issue if the water, once transferred to the clay pot and put over flame, begins to boil a little?

    Not having too much luck keeping the alcohol burner lit with the non-turret base. And why does the turret base need a trivet underneath?

      much better with the turret, which is why I added it--so much better airflow for a steady flame. You could think of the base as a way of having a shorter or higher burner depending on chaxi--that's how I see it. The bottom can get hot (holes) and could mark someone's table or runner so we suggest a trivet...
