In regards to the plumbing of the toilets, doesn’t one version have issues with bad smells versus the other? I can't remember which one, the S trap or the P trap.
Do the toilets on the upper floors use a different trap than the ones on the ground floor?

You can use either S-Trap or P-Trap for any and it's fine. The smell may be as a result of improper sizing of vent pipe and not necessarily from the WC. Each of the Traps, whether P or S holds water to prevent back smell unless the WC wasn't designed well
