You know, I wished that instead of a choice of quiet or energetic, the party begins quietly as a few people don't really know each other. So, after a few talks, a few drinks, and a couple poker games everyone begins to unwind and let loose, allowing the party to evolve into the energetic one.
Though it's a shame we didn't see anymore of the Normandy crew like Ken and Gabby at the party.
well, ok, samara is kinda boring at this kind of the party mostly meditating under the tree and everything but you really should have get miranda, her banter with jack is priceless

In my opinion the wild party fits the story best because as joker says flayling your arms means you have more important things to worry about than your dancing. It also means having fun before possibly dying.

Because they're basically attractive to many races I think its part of their biology. Since they're probably one of the few races that have children with different species.
There's a bit in Mass Effect 2 that makes it seem like they might have some sort of pheromones they give off.
It is implied in one interaction they all look like the attractive female of whatever race is seeing them
