Gâteau au Yaourt (Classic French Yogurt Cake) with Chef Dominique Ansel

  • Growing up in France, every kid learned how to make this easy yogurt cake. All you need is a container of yogurt and a few pantry staples, and you use the yogurt container as a measuring cup for the other ingredients.
    Here’s what you need:
    Ingredients:
    1 container (7oz) yogurt (plain full fat or Greek yogurt)
    2 containers flour
    1 container sugar
    1/2 container olive oil or vegetable oil
    3 eggs
    1/2 tsp baking soda
    1 tsp vanilla
    1 tsp salt
    Tools:
    Large mixing bowl
    Wooden spoon or spatula
    Round cake pan or loaf pan
    Method:
    1) Preheat your oven to 360°F
    2) Butter and flour your cake/loaf pan (you can also use cooking spray)
    3) Combine all ingredients except the eggs and vanilla in a large mixing bowl. Stir with a spatula until smooth and free of any lumps. Add the eggs and vanilla in stir until combined.
    4) Pour the batter into the prepared cake/loaf pan. Bake for 25-35 minutes or until the top is golden brown and a paring knife/cake tester comes out clean. Once baked, let cool for 5-10 minutes before removing from the pan. Enjoy!

    I came about this recipe on my own, without knowing there's an equivalent french version, I came about, because I wanted to cut butter...
    I also reduce sugar by half and added 3 tablespoons of honey in my recipe.
    So it's super healthy and no compromise on taste!

    Dominique, I followed your recipe adding less sugar and orange zest. I worked with 2 cups of vanilla-flavored greek yogurt for one cake and 6 muffins. They came out delicious!! Thank you very much for sharing this simple yet delicious recipe. I am buying your book...

      How much less sugar? One cup is a lot so hoping to cut back as well but don’t want to mess with the proportions!

    You mentioned that the cake tastes good when flavored with orange blossom, and so I want to try that out. If I use orange blossom water, should I also use olive oil like you did in the video, or a different oil? The two just don’t seem to go good together in my mind but you might think otherwise.

    Baking soda as in bicarbonate of soda or baking powder as in rising agent for cakes?

      Baking soda is bicarbonate of soda. Baking powder is different. Both are rising agents
