- Smoked chuck roast is easy to cook, requires minimal ingredients, and, when done right, tastes similar to brisket.
Sometimes called the poor man’s brisket. It is affordable if you want that brisket taste but don’t want to shell out for a whole brisket.
When I smoke a chuck roast, I treat it like brisket, from seasoning to smoking, resting, and slicing.

Thanks for this! I did one yesterday. $16 for the chuck vs $32 for the same weight brisket. The fat rendered perfectly and I liked it just as much if not more than a brisket!
I do these often. Cooks faster, cheaper and it's damn good.
@@mattx7657 about how long does it take on average?
@@SurvivalistSheepdog 2 hours, but I'm only cooking 1.5-2lb
in my local grocery, chuck used to be like $4/lb, now brisket is $8 and chuck is $10

Costco choice beef chuck roast pre cut is 5.99 lb. Prime brisket untrim 3.99 lb.Californa
@@kakusei3672 got the chuck recently, smoked 1, froze 1. yummy. They had prime brisket flats, got it, smoked it, seemed to behave well during the smoke, but in the end was a little tough.
I do this all the time, but shredded at the end. It's cheaper and less hassle than a brisket and nearly as good.
LOOKS SO GOOD
Delicious
This looks amazing 😋
It looks good.
That looks great lol beautiful smoke lines
👍 once you smoke chuck roast game is on!!! Half price of brisket and sometimes better
Thanks for the video!
Chuck roast budget…it’s about $25 for a average sized roast now
I love doing this
I'm so going to try this. A brisket, even a small one is still too much meat for me :)
Delicious...
Make me a bbq sandwich
Looks epic! Doing this tomorrow!
How’d it go
@@blickstick7884 perfect! It was so tender I couldn't even pick it up with tongs or slice it!
Yummy ❤️❤️❤️❤️
💯 cooked ❤️🔥
13lb smoked brisket yeilds about 6 lbs after trim and cook. Chuck is much cheaper at that point.
you're on crack or trimming waaaaay too aggresively
I just smoked a prime whole brisket from Sam's. It was 17 lbs raw and produced 6.5 lbs of edible meat. That's $13/lb final. I actually prefer Chuck roast smoked and it comes out cheaper.
So what was the final amount for this?
How long did this take?
Part of the award winner best burger in Texas r had a blend of Chuck in the recipe
I remember when brisket was less expensive than many other cuts.
Ddddaaaammmmnnnn delicious
That made my fuckin mouth water.
Smoked chuck roast is a great chili ingredient.
Great idea! I'm going to try that.
How long does it take that cut to reach 175F cooking @ 250F?
What is probe tender?
How long did you have to smoke it wrapped?
I am in Texas and brisket is 1.99 a lb. Chuck is 4-5 a lb
Do you all remember that brisket was the cheap tough meat that sold cheap because nobody wanted it?
Isn’t chuck more expensive?
Yes, but much smaller sized and more appropriate for normal dinner nights
Chuck roast is less expensive. You get more per lbs with chuck.
It is more expensive per pound
Yes and no
Per pound yes. But it’s smaller cuts. For example the smallest brisket I seen at Sam’s the other day was 16lbs and was like 70 bucks. I got 2 Chuck roasts for like 18 bucks. Just threw one on the smoker
Chuck is more expensive than a whole packer😂
I literally just did this. Same way. Came out tough AF. Dunno why.
SAME. I've tried twice and failed both times. idk what I'm doing wrong
Same the first two times for me, what i did was cook low as i could which ended up being 175-190. It stalled after 3 hours at about 139. Then i upped the temp and cooked it as normal. Pretty annoying tbh but worth it for me.
What they spray with
Vinegar/water mix or vinegar/apple juice water mix
Hmmmmm
Brisket is cheaper at Costco now! 3.99/lbs vs 4.99/lbs
Just bought 2.5 lb chuck. We are going to smoke it tomorrow for first time. Fingers crossed
Curious how this worked out, I'm gonna try this weekend same size! Any tips? Time?
For me in Florida, chuck roast is now unfortunately more expensive per lb than brisket. Prime brisket is running 5$ a lb in trimmed. Choice chuck roast is running 6$ and prime 8-9$. I smoked one today and it was amazing. But more expensive
As it should be. Chuck is better cut of meat than brisket
@@skyshooter4009 They both have their lanes.
Chuck is more expensive than brisket
Bad news: Chuck Roast per/pound is more expensive than brisket
Which one taste better? Chuck or tri tip?
This might be a late response but hey here goes: totally different cuts that should be prepared completely differently. Chuck in my opinion should always be served as a well cooked meat as it is full of connective tissue and tough as a steak without breaking this tissue down. This is why it is smoked, braised, or roasted into a pot roast at 205°+. This is yummy, but a tri tip on the other hand should NEVER been cooked well done as it is a perfect roast to cook to medium rare (130°-135°) ot medium (136°-140°). So, the question is, do you want BBQ or braised food, or do you want a steak? My money is usually on tri tip for everyday cooking, and chuck when I want to smoke something smaller and easier than a brisket or pork butt. Also I'm Californian. I know my tri tip, but have learned all my BBQ skills from Texan techniques. Happy eating!
As a Californian tri tip ALL DAY but they are too different cuts that get cooked way differently chuck is low and slow where tri tip is hot and fast I cook tri tip at least 2x a week I do mine at 450° indirect fat side up for 20mins flip and cook till 130° internal keep the rub simple salt pepper granulated garlic and dried parsley
Shoot Chuck is going to be getting expensive now
All these videos have raised the price of this cut. 😮😮😮
No need to add the extra grease.
"probe"
It’s either top tier comedy or he’s ducking harder than Jon Jones
Chuck is expensive. We have hamburger budget
$5.99 chuck roast vs $4.49 brisket at Costco where i shop.
Got to look at how many pounds you're buying. The chuck roast comes out cheaper
@contingencyibct3120 math is hard, huh?
Why does the meat look really oxidized?
I bet you smoke one whole!
How dry is it after 10 min
That's how it normally is after resting. He must have cut it right after. Honestly I braise mine
I do them all summer, mine are never dry or tough.
@@Musclecar1972do you smoke yours up differently? Really not trying to spend an afternoon cooking up meat dust haha
@@George-zf3sb Not sure how you smoked yours, but I basically do the same as he’s done here, I do spritz it every 20 minutes or so with a combination of beef broth and Worcestershire, but everything else is the same, mine always come out juicy and very tender, with the same flavor as a brisket. If you pick one with to much lean, you will have some dryness, I always choose carefully.
Chuck costs more then brisket …
huh? brisket is quite a bit cheaper…
Tried this, and it did turn out well. However, I felt the cook time was alittle off to really get brisket tender. It was tender, just not brisket tender. But it was great!
Mine turned out horrible.
Why?
@@jaywood8540 way dry. I don’t think there was enough fat.
@@jaywood8540 I’m still learning. Lol
Did you cook it til 200 degrees?
Did you cook it at 250 and wrap at 170?
Not too tough?
$3
Fabulous
That's not the same vid. Look at the butcher paper that's not the same cut of meat.
🤣🤣
Chuck costs more so no deal
Man you drenched that thing in water
Chuck is as cheap as brisket
Brisket is $4 - $5 bucks a pound.
Chuck is $7 - $8 bucks a pound.
Plus, chuck is not better than brisket.
Brisket is cheaper than chuck
You lose almost a half the weight of a brisket through trimming and cooking, chuck is pre trimmed with way less weight loss
You obviously don't know how much a chuck roast is. Do you?
Brisket is trash
Total cook time?
Depends, but get the bark nice and kick the heat up to 350 until it hits 200 . It's way easier that all these videos. It too me too long for 3 pounds. I wrapped it at 170 and only went to 225,took forever. After you wrap it you can go to 350 degrees in your oven. ( waste of pellets if you don't imo ) it's not a brisket or a prime rib, so get the internal temp to shred.
@@buzzardscry1383 low and slow, smoke at 200 until internal temp is 150, wrap it and bump it to 250 until internal temp is 202. Using a more substantial binder than oil helps, because it caramelizes and removes the need to spritz- simple yellow mustard is incredible, mayo works as well (skip the soy from the "vegetable oil" base and make it yourself, it takes literally 2 minutes and you'll never go back).
It takes 6-10 hours depending on the size of the meat. A brisket can go 12-24 hours. But if you want to break down all the cartilage, intramuscular fat, and render all the tough bits into buttery goodness, it takes a very long time. And it is VERY worth it!
Im confused chuck at the grocery i go to was 4:99 a pound. Prime Brisket i got for 4:29 a pound
Dont forget you have to trim the brisket
What degrees is probe tender? I assume we don’t go to 200 degrees like a brisket correct?
Brisket- 3.99/lb. Chuck roast - 8.99/lb. I’m on the brisket budget bruh
Brisket is dirt cheap
If you want to cook pounds of meat.
73 dollars for brisket is not dirt cheap
