  • It was a tough day at the cabin as we thinned out our large flock of beautiful roosters. As always, nothing goes to waste, and we end up with canned stock for this upcoming winter. We later head to a nearby lake to deal with Alaska's record breaking temps.

    Just a suggestion. Don't bring your stock up to a boil just simmer it and you will have nice clear stock instead of being cloudy. Keep the lid off so it can reduce for richer stock. You can also use your smoker instead of Browning for a different taste.

      @@SimpleLivingAlaska Look at a lot of asian recipes for making beef noodle soup or other asian inspired soups. They usually do an initial boil of the meat for 5-10 minutes, and skim the scum that floats to the surface. Then drain all that water, rinse the meat, THEN proceed to making the stock. You will have a very clear broth.

    Raise a Duck with your chickens, it will act as a Alarm to keep the chickens safe. Duck will watch the sky a lot.

      I have 16 ducks and a mixture of chickens I notice the ducks were acting weird and seen them looking up into sky so I started looking around and guess what I find in the trees? Grabbed my shotgun. Not today hawk

    I'm just catching up on your older content. When Eric says "we aren't even going to wait 30 minutes before we go swimming " I was dying. It's like living on the edge, off grid style. We live on a vineyard in NW Pennsylvania, weve had epic heatwaves and I'll go for a swim, even if I ate. I love how you lace very informative content with humour and personal notes on why you are trying different things. Also love how Eric compliments Ariel's salad and cooking, what a sweet wife. It's nice to see the cute banter between you two. 😊keep the good content coming

    I'm vegan and watching this, because if I ever had to live sustainably, as a homesteader I know I would raise animals, as a emergency food source, if all else failed. If we ever had a major economic collapse, I might need to have chickens to get enough protein. I appreciate this, because nature is violent, and I want to know what to do, if I have to cull as animal as food. I guess it did not get to that, skipped the bloody part of it. Black chickens, I would have never known...love that lake, looks so serene.

      A channel that has a LOT of info on raising animals, including meat birds, as well as just wonderful wholesome homesteading, is the Justin Rhodes channel. He and his wife and 4 children are delightful, they teach you how to garden, raise animals, and how to live on special diets. I would promote them to everyone, they are that interesting.

    What a beautiful area you live in, it's just amazing how different certain parts of the country are. Culling is never easy no matter what, it's just something that has to be done. It's the way we get our food, the way we feed ourselves and our animals. But you're right it is never easy.

And thanks so much for replying. I follow about a half dozen CZcams channels, and have been for a couple of years.     Hi Ariel and Eric, one natural amendment you might try is comfrey tea, or as I call it, "stinky water", because it IS stinky! But it is a great liquid amendment, and I saw that you have a comfrey plant in your garden. Pick down a good bunch of your leaves and place them in a 5 gallon bucket, fill with water and cover the bucket, let it sit for at least a week, preferably 10 days or more. What you will end up with for liquid in that bucket will be a rich amendment that you can dilute with 4x the water as comfrey tea and use it on plants that need a boost of nitrogen and potassium primarily, but also a bit of magnesium. My garden plants really do well with it. That and my compost pretty much give me amazing veggies, herbs, and flowers, and I'm not that different a growing season than you guys, as I'm in Vermont, zone 4. Good luck!

      My mom was competitive swimmer and she told me her co swimmer ate a heavy meal before training. After swimming laps the guy was splashing at the end of the pool. He could've easily stood up, so they thought he was just playing a joke until he floated up unconscious. Anyway he recovered after being hospitalised. It was caused by cramping or something, he said it felt like he had stones in his stomach and that no matter how hard he tried he couldn't float up.

    Dogs must be lucky to have such a large, natural swimming pool and the outdoors to enjoy! Most of me hope there is a natural predator that scientists can introduce to an area to keep the beetle population down. A little part of me thinks let Mother Nature take its course, and let things balance out on its own over time. Appreciate giving us the tour.

    here's another hint - pressure can dry beans, works like a charm and you do not have to pre soak or cook for 4 hours. The Kneady Homesteader and Linda's Pantry on you tube have great videos on this. I prefer to cook my beans for 5 minutes longer in the pressure canner - it's all trial and error to find out what you like best.

    I make my bone broth with just salt pepper and garlic then add my seasoning when I make my soups like lemon and cilantro chili peppers and oregano yummy

    Look like Roosters took a " Wrong Turn" like the movie.
    Dealing with Hawks, folks had to string aluminum pan pies up, which afterwards didn't have any more problems with Hawks.

    We used to caponize our extra roosters. That's what those big roasting chickens you buy in the stores usually are. So you catch the rooster, snip the bits, stiptic the cut or use a spray these days, and no more rooster. Try to get it done before all the crowing. They calm down quickly after that. They get bigger and are great roasters.
    I lost a lot of my trees to those awful beetles. Same problem in New Hampshire. But we've also got bittersweet which strangled some of my trees. Lost my 2 peach and 1 pear tree to it. We'll be taking them down soon and they'll be fire wood, maybe some spoons and bowls carved out of the fruit trees though.

    In Florida we use mono filament fishing line to keep the sea gulls out of areas where birds are not wanted. Somehow the birds know the line is there and don’t even come close. Climb up a ladder and intertwine the line across the trees and your problem will be solved.

    When the stock first comes to a boil, skim off the material that floats and it will help clarify your stock (it won't change the taste, but helps clarify the stock if that is something you want to achieve) . I toss in a couple of peppercorns and a few bay leaves for extra flavour too. Thank you for taking the time to share your stories . . . I enjoy watching the summer ones, particularly now in January while we are in the depths of winter here in Nova Scotia, Canada. Spruce bud worm is a natural predator but unfortunately in conflict with forestry harvesters.

    That's great when you have dogs, I don't so I always take every year my dear bones from a couple of deer a friend gives me and make bone broth then take the soft bones and dry them in the dehydrator and grind them in the Vitamix to make bone meal for the garden, the same thing for the chicken broth.

    Don't worry about the comb. Frost will trim that down. The old timers use to trim them. Just not on a full moon. Goose will help with sky predator.

    Don’t know if anyone told you but chicken feet in stock gives great collagen. Usually the bones are hard so I always discarded them after I took the meat off for the dogs.
    Adding them makes the best stock.

    Great video, thanks for the info on the trees - get that chain saw sharpened for the winter firewood harvest. Lots of work but very satisfying when your stove is blazing; the sawdust is great if you can capture that as well. Hope the fires stay clear of you.

    Your pressure canners look like our pressure cookers that we have over here in England I've had mine for 50yrs but it's smaller than your canner. Love the video! So glad that you didn't film culling your birds. We love Khol rabi grated with salad or as a side dish, really refreshing, but will can some after watching a video of yours.

    Get a couple of geese that have been raised with chickens. This part is uber important because they see themselves as part of the chicken family and will protect them loudly, fiercly, and with their lives. So again, the baby gosling must grow up with chicks, not with other goslings! It's really fun to watch! Lol 😂 💓💛💚💙💜
