    Here's a recipe for a delicious Veg Kathi Roll:
    Ingredients:
    #### For the Paratha:
    - 2 cups whole wheat flour
    - 1/2 teaspoon salt
    - Water (as needed)
    - 2 tablespoons oil
    #### For the Filling:
    - 1 cup paneer (cubed)
    - 1 large potato (boiled and cubed)
    - 1 cup mixed vegetables (bell peppers, carrots, peas, etc., finely chopped)
    - 1 large onion (thinly sliced)
    - 2 tablespoons oil
    - 1 teaspoon cumin seeds
    - 1 teaspoon ginger-garlic paste
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon garam masala
    - 1 teaspoon coriander powder
    - Salt to taste
    - Fresh cilantro (chopped)
    #### For the Chutney:
    - 1/2 cup mint leaves
    - 1/2 cup cilantro leaves
    - 2 green chilies
    - 1 small onion
    - 1 teaspoon lemon juice
    - Salt to taste
    #### Additional Ingredients:
    - 1 large onion (thinly sliced for garnish)
    - Lemon wedges
    Instructions:
    #### Preparing the Paratha:
    1. In a mixing bowl, combine the whole wheat flour and salt.
    2. Gradually add water and knead into a soft dough. Cover and let it rest for 15-20 minutes.
    3. Divide the dough into equal-sized balls.
    4. Roll out each ball into a thin, round paratha.
    5. Heat a tawa or flat pan over medium heat and cook each paratha, brushing lightly with oil on both sides, until golden brown spots appear. Set aside.
    #### Preparing the Filling:
    1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
    2. Add the sliced onions and sauté until golden brown.
    3. Add ginger-garlic paste and sauté for another minute.
    4. Add the mixed vegetables and cook for 5-7 minutes until tender.
    5. Add the cubed paneer and boiled potatoes.
    6. Add turmeric powder, red chili powder, garam masala, coriander powder, and salt. Mix well and cook for another 5 minutes. Garnish with fresh cilantro and set aside.
    #### Preparing the Chutney:
    1. In a blender, combine mint leaves, cilantro leaves, green chilies, onion, lemon juice, and salt.
    2. Blend into a smooth paste. Adjust seasoning if necessary.
    #### Assembling the Veg Kathi Rolls:
    1. Take a paratha and spread a spoonful of chutney in the center.
    2. Place a portion of the vegetable-paneer filling on top of the chutney.
    3. Add a few slices of raw onion and a squeeze of lemon juice.
    4. Roll the paratha tightly around the filling.
    5. Serve immediately with extra chutney and lemon wedges on the side.
