I just wanted to share real teriyaki sauce recipe with you since I am a Japanese living in Canada:)
For 100ml teriyaki sauce, you will need only 4 ingredients. No water for thick teriyaki sauce.
    •30ml soy sauce
•30ml mirin( you can get it from international aisle at regular grocery store)
•30 ml sake( rice wine specifically for cooking) •15ml sugar.
    • Honey is optional
Put all the ingredients into sauce pan or frying pan and heat it up until the sauce becomes thick enough. ( alcohol will be evaporated as well)
    Enjoy the Japanese teriyaki sauce!

You can get fresh spinach and put it in boiling water for 15 seconds and puree it and add to the chicken...that way the flavor will be enhanced much more....I am an Indian and we do it this way...your method is ok too...but when u add something extremely cold in a hot pan...the flavors change...
