Personally, I think that, narratively speaking, it makes the most sense if the fight between SSJ Goku and Gear 5 Luffy would be left vague. You would never know who won and it wouldn’t matter, much like that fight between Goku and Vegeta in that online Dragon Ball game.

I feel like Goku would have his get back at the people who he believes "killed" Sabo. Goku at this point in time has most likely met Roshi and was given the old Nimbus Cloud since that's the only way for this to make sense. I feel like Bulma should be here too since they were still on the hunt for the dragon balls I think (correct me if I'm wrong). Assuming that Grandpa Gohan gave Goku the nimbus before his passing, this would make sense.
This goku from One Piece has never meet Roshi. In this timeline there just exists a flying yellow cloud. Maybe its a homie that Big Mom created in the past and Goku found it. This is not the Goku from Dragon Ball, but an alternative One Piece version of Goku with a identical design an similiar abilities that are adjusted to the One Piece universe!

18:14 Goku wouldn't learn to fly. That isn't a Saiyan thing it is a specific ki technique he would have no way to learn. Geppo would make more sense here
There is no reason at all here that Marineford goes any differently for Ace than it does in the canon: he was nearly saved but succumbs to Akinu's provocation and gets killed. This would also make for a waaay better monent to trigger Goku's Super Saiyan transformation than Pudding being smacked aside by Big Mom.
Every saiyan we've seen can fly, its a technique but also a saiyan thing goku was just too weak to use it

Maybe Goku could have been a humanoid Monkey Mink since they transform under the full moon so that could be Oozaru and maybe scale Oozaru to be like bigger than a bear because he's way too bug then minks can use electricity so Goku would be able to launch it like Kamehameha and for his forms he could have Kaioken technique as like a 2nd gear which can stack on Oozaru and other forms and was brought out through training, then false ssj, then ssj and lastly would be Ssj 2 but obviously still scale him down so he could be contained in the One piece world
I would have name goku’s fruit something like: Hito-Hito no mi: Model Sun Wukong or Ape-Ape no mi: Model Sin Wukong. I think it would be more original and conected.

I feel like it would have been a better plotpoint for Luffy and goku to fight kaido and law and kidd to fight bog mom so goku goes SSJ when Luffy dies for a short time resulting in gear 5 luffy and SSJ Goku vs Kaido (which is essentially the same as krillin dying on namek since goku and luffy are basically goku and krillin in this)
Than the Luffy could've missed the opportunity and when he wakes up in G5 Kaido would've already lost since SSJ Goku basically toyed with Big Mom and one shotted her

If Goku saw sabo get "killed" he would have went on bored the Celestial dragons ship and attacked everyone.
I don't think he had any abilities back then or knew of them and while they might be angry none of the brothers did anything in Canon so he might just follow their reactions being part of the reason.

Had this event happened later however even a year later I feel like it certainly would be something that Goku would try to go Red Ribbon on however that would be an interesting timeline in which if anything bad did happen to the Celestial Goku would be forever hunted.

There are definitly parallels but One Piece Goku is more adjusted to the power systems in One Piece. So he cant destroy planets or moons. If that would be the case the story would be way to broken and in my opinion to boring
