    On my last day in Barbados, I headed off to an amazing supporter’s home for a traditional Trini breakfast!
    Auntie Indra is the reason why I came to Barbados-she invited me, and now she’d be cooking some delicious Trini dishes for me and my friends Craig and Nerissa! She’s also Nerissa’s mom and owns the amazing Airbnb I’d been staying at!

    She had already made some baras and smoked herring, and was also starting on the aloo pies and bakes. She had tamarind and mango sauces, as well as pepper sauce. Just watching the cooking process was taking me back to my time in Trinidad!
    I met her cat, Ginger, and watched her flatten and fry the baras. Baras are the base ingredient for doubles, which is like a play on an Indian dish called chole bhature. They top it with chickpeas (chana) and sometimes vegetables and even meat. They also add different sauces like tamarind and pepper.
    I even tried my hand at making and frying a bara, and then we fried an aloo pie, which is stuffed with potatoes. They’re almost like Trini potato empanadas! Then, she fried up some fry bake, which we’d be eating with some smoked herring.
    Next she took the rest of the bara batter, molded it into balls, and fried them. These are called pholourie! They’re like little crispy fritters.
    First, she boils and washes the herring, as it’s very salty. Then, she sautees some onions and peppers in a pan and adds the smoked herring, a Bajan pepper, and green sauce.
    Then, it was time to eat. We started with the doubles, which had an amazing, crispy dough. They were perfect with the chana, mango sauce, tamarind sauce, cucumber chutney, and pepper sauce! Then, I ate the rest of the filling with some pholourie!
    I added some of my David’s Been Here hot sauce, which added a tropical kick with the pineapple and guava! It was fantastic!
    Next was the aloo pie, which we added chana, tamarind, mango, cucumber, and pepper sauce to. The flavors and contrast in textures between the chana, cucumber, and pie was also excellent. What an amazing breakfast! My David’s Been Here sauce made it even tastier!
    Next was the tomato choka, which is almost like a salsa, and the bake. You open it up and add the herring and choka to make a sandwich. It was smoky and a little salty, and the peppers were hitting me a little bit!
    It was my last day in Barbados, so I was going all-out with the food. I couldn’t help but go back in for more pholourie and doubles. The food had me sweating!

    I just watched this for the second time and David you make the breakfast look so mouth-watering. It's now 2:47 pm in Toronto and I am drooling, especially today when we have our first snowfall. Lots of snow outside. Second look at the video makes it even more enticing. Nerissa's mom did a great job. Trini to the bone. Trini food, absolutely the best.🇹🇹🇨🇦

    WOW!!! Breakfast of Trini champions. Good Trini home -cooked food. And it's true that it's always better in Trinidad: home of the doubles. You did a good job making your first bara. I am drooling for some of that now 8:35 am Canadian time. I use yeast in my fried bakes and they puff up really quick and it makes a better pocket to put the filling in it. Baking powder makes it soft. And yes David, you can lick the plate. In some countries, it's an honor to the cook because it shows how much you enjoyed the food. Nice, enjoyable video.     Bajan bakes are different fun Trini bakes. Bajan bakes have in sugar, smaller, round, crispy on the outside and soft on the inside.

      Bajan Master: if we use yeast in the fried bakes then we put sugar in the dough, which I do. It all depends on what process different people use. A yeast dough makes it exactly the way you say: it puffs up faster, crispy on the outside and it makes a nicer pocket to put whatever you want in it. I find that baking powder doesn't do that and the fried bake comes out soft, not with the crispy outside.🇹🇹🇨🇦

      every trini that looks indian comes from Indian heritage as there was huge immigration about one hundred years ago.

      @@Davidsbeenhere Almost 200 years ago. East Indians were brought as indentured servants to work the sugar cane plantations. Indians arrived in British Guiana (today Guyana) a few years before Trinidad.

    Correction: Doubles are definitely a Trini thing but we do make them as well in Guyana.
    Fya, a lot of Trini’s and Guyanese people are found in Barbados. All three places intertwine and so does our culture. Can’t make blanket statements without knowing the facts.

    Table etiquette is warranted. Licking a plate, smacking and slurping, putting a serving spoon in your mouth then back in the dish, and touching your nose then handling a stack of bake ....all are unsanitary habits.

You weren't born and raised in the Caribbean so we don't expect u to act like us and get everything right. You're going to do things or make mistakes and we know that. We don't take it seriously.       Not disrespectful at all to 🇧🇧 Barbados 🇧🇧. We enjoy our Guyanese, Trinidadian and Jamaican restaurants in Barbados 🇧🇧. Our Islands are made up of many different Caribbean Nationalities. Barbados have always had strong family ties to Grenada,St. Vincent, Grenada, St. Lucia, Guyana and Trinidad , Tobago and Jamaica. I will be enjoying Guyanese, Jamaican and Trinidadian food while I am here in Barbados on holiday. Ackee Tree (Trinidadian owned) Reggies Real Jerk (Jamaican owned) Our Guyanese community here own and operate many Rum shops , Bars and Restaurants. I shall further add we have clothing stores and other businesses owned by our Caribbean brothers and sisters.

      We should say the same about pizza being eaten outside of Italy or burgers eaten outside of the United States.. nothing disrespectful about that..
      However on a side note.. David is now an official Trinidadian he can't get enough of us, he's hooked for life now 🇹🇹😉

      Yeah I love David but the touching up food especially after licking fingers.... I won't compare to Mark tho, they all do it.
